Welp, the NY pizza came out awesome--at least the crust and cheese. the crust was crispy and perfectly chewy. really, really good. the sauce is a work in progress. all i can say is the sauce was better than last week.
Making ravioli on sunday. simple ricotta with pecorino romano cheese. I'm making a bolognese sauce to pour over them.

goodnight, everyone. I found the strength to do it. But don[t hold me to doing it again.
