That sucks. We don't go very often because I eat too much when I do go but it is nice to have that option. I still remember your pics of fried chicken that went through the chocolate fountain. :lol:

And good morning! We have to go close the camper today, they just sent me a text that they turned off the water last night, but will turn it on so we can finish at noon. We should have done ours yesterday and moved the neighbor today. Off we go to play with water in 30 degree weather. ugh.

Glazed Fresh Apple Cookies

Cook time: 30 Min Prep time: 40 Min Serves: Makes 5-6 dozen
Ingredients
1 1/2 c hot water
1 c raisins
shortening, for greasing pans
1/2 c real butter or vegetable shortening
1 1/3 c light brown sugar, packed
1 egg
2 c all-purpose flour
1 tsp baking soda
1/2 tsp salt
1 tsp cinnamon
1/2 tsp nutmeg
1 c tart apple, unpared, finely chopped
1 c chopped pecans or walnuts
1/4 c apple juice or milk
GLAZE
1 1/2 c powdered sugar, sifted
1 Tbsp real butter, softened
1/4 tsp vanilla extract
1/8 tsp salt (omit, if butter is salted)
2 1/2 Tbsp light cream or milk
colored sugar crystals or decorations, if desired for holidays
Directions
1. Preheat oven to 350°F. Grease cookie sheets.
2. Soak raisins in hot water, until ready to use; then drain.
3. Cream butter (or shortening) and sugar, with electric mixer, until sugar is dissolved.
4. Add egg, and mix well.
5. Sift together the flour, baking soda, salt, cinnamon, and nutmeg.
6. Add to creamed mixture, a half of a cup, at a time, while stirring with a wooden spoon.
7. Drain raisins. Then, fold in apples, nuts, and raisins. Add apple juice (or milk), and mix well.
Glazed Fresh Apple Cookies
8. Drop by teaspoonfuls onto greased cookie sheets.
9. Bake for 10 to 15 minutes or until done. Makes 5-6 dozen.
10. GLAZE: Mix together sifted powdered sugar and all other ingredients.
11. Spread on cookies, while still hot. Sprinkle with colored sugar crystals or other decorations, if desired for the holidays.

This recipe is a great new twist on cinnamon buns. The apple and caramel mirror the flavors found in one of our favorite autumn treats, caramel apples. These buns are best served warm; so if you have to wait awhile before sharing, gently reheat in the oven for 5 to 10 minutes before serving.
Dough
Filling
  • 1/2 cup sugar
  • 3 tablespoons Instant ClearJel or King Arthur Unbleached All-Purpose Flour
  • 1 teaspoon ground cinnamon
  • 1 cup peeled, grated apple (1 to 2 large apples)
  • 1 tablespoon lemon juice
  • 1 cup chopped walnuts, optional
  • 1/2 cup caramel sauce (see tip, below)
Directions
  1. To make the dough: Mix and knead all the ingredients — by hand, mixer, or bread machine — to make a smooth, slightly sticky dough.
  2. Cover the dough, and let it rest for 1 1/2 to 2 hours, until doubled in bulk.
  3. To make the filling: Combine the sugar, ClearJel, and cinnamon.
  4. Toss the apples with the lemon juice; combine them with the sugar mixture.
  5. Transfer the dough to a lightly greased work surface. Roll it into a 12" x 24" rectangle.
  6. Spread with the filling, and top with walnuts.
  7. Starting with a long side, roll the dough into a log and seal the edge.
  8. Cut 12 equal slices; place them cut-side up in standard muffin cups lined with lightly greased baking papers.
  9. Cover the buns and let them rise until puffy, 60 to 90 minutes. Towards the end of the rising time, preheat the oven to 350°F.
  10. Bake the buns for 20 to 25 minutes, until lightly browned.
  11. Remove the buns from the oven. Cool for 10 minutes, then drizzle with caramel sauce.
  12. Yield: 12 buns.
