Good morning REOville! I hope everyone has a great day.

I am going to do my Irish stew for dinner, and I haven't made it since going gluten free. Which means no flour on the meat, and no beer in the braise. I have no clue how it is going to turn out, and will have to rename it since I can't use Guinness and will use a red wine instead. What does one call a stew made with wine? There must be a name other than just stew? If I used mushrroms it would maybe be a bourguignon, or if the wine were burgandy a beef burgandy, but mine won't have either. Anyone have a recipe for a red wine beef stew with veggies and no flour?

Have you considered gluten free flour? I don't know if it works but google has a lot about using it. https://www.google.com/search?btnG=1&pws=0&q=gluten+free+flour

I am not sure it will do the same as gluten will? I even went to the health food store, but didn't buy it because of the prices. Pretty much since childhood I have hated white gravy, preferring au jus or gravy thickened with corn starch. I never put white (flour) gravy on anything except dusting meat to brown, which may be a reason why I hate turkey. Turkey was dry and nasty and required gravy, which I wouldn't eat. I have learned to brine turkey so it can be eaten without smothering in what I think is nasty gravy but still never associate turkey with anything positive. Kind of like Den not liking chicken :)

When my sister married Paul I was about 8, he came to the family with his gravy and it was the first time I ever knew au jus existed. It was great with beef and is how I always do my gravy. I think I am conditioned that certain things, like the dusting of the meat with flour for stew, is just de rigueur and classics are classics for a reason right? It would be FANTASTIC if the non white flour worked, I could try biscuits and gravy which to me is pretty disgusting even thinking about (probably ate it when I was a kid and got sick so never again!) I have tried the GF pasta and was pleasantly surprised but turned off by the extraordinary price (like 4x the normal cost) so only bought one little box to add to the chicken soup I made for DH since he was sick, and he couldn't tell the difference :)

And in other breaking news, I just bought my first can of Spam yesterday. I bought the "lite" version. I've never had Spam before but it was only $2 a can so thought I would try it. People rave about it, or hate it. I think I am supposed to pan fry it right?

It's way past my bedtime and I think I am a bit punchy without sleep.

I did a post on FB and thought I would share here also:

I can't wait to try some more stuff with my new recipe for dough! Using the quinoa flour gives it a different flavor than the almond flour. I can make terrific cookies or muffins even. Just added a little more baking powder for a nice texture. With some sweetener and cinnamon it was tasty! I didn't buy stuff for pizza just yet. Want to try some stuff first. Thank you so much Krista for helping me with this. It is just what I wanted!

This is the base. I am still experimenting with added spices and sweetener. I did use cinnamon and stevia. I will try cinnamon, honey and raisins too. This can also be made savory by adding garlic powder and other spices. I would use quinoa flour for savory and almond flour for sweet.
1/2 cup quinoa flour (or almond flour),
1/2 cup coconut flour,
2 Tablespoons Gelatin,
1/3 cup Lard,
3 large eggs,
salt ( I use about 1/4 tsp),
1Tsp baking powder mixed into 1 TBLs water.
Mix dry ingredients together. Mix eggs and lard with mixer. Add dry and the baking powder in water. Combine by hand. It will be like cookie dough. I made mounds of dough like a thick cookie. Got about 8-10. Baked at 350 for about 10 minutes then checked. I wanted them kinda moist. You can add time to get them a little harder. I am trying my best to stay gluten free. Since I am eating Primal I can eat fat so the lard is perfect!

Sadly, my trip to ReoVille has been delayed thanks to the wonderful folks at the USPS!!!!! :mad:
I was expecting a Valentines day delivery, however that turned into my package being either lost/returned to sender.

Patiently waiting........I'll post my thoughts/pics when I finally do receive my grand.

I've paid taxes since I was 15....seriously, hardship license and off to work I went-picking blueberries, hauling hay and working at a plant nursery. Already had a couple pretty good babysitting and cleaning houses gigs by that time too. I worked hard, saved when I could. Worked my way through college and was finally seeing light at the end of the tunnel when I made it to the big time of the upper lower class making a little over 40 grand a year. Put my meager, but hard earned life savings into a little house and the walls came tumbling down. My medical insurance covered the first surgery, and my job stuck by me until the other shoe fell and I needed more surgery. I had to walk away from my little house, including the down payment and remodeling money I had already sunk into it. After exhausting every other avenue I could see, Cobra insurance cost more than I made, my insurance at the time denied coverage because of "pre-existing condition", nobody in my working class family able to throw down at least 160,000 for medical care, I went on disability so that I can hopefully get fixed and get back to the work I love.
Now that I've been in this position and have been in the social security offices and food stamp offices, sure, I see the parasites that drive up with the bling, bling and big attitudes....but I also have seen professionals that had their lives turned upside down, elderly with nobody that gives a damn, and folks in wheel chairs and walkers. I do not think most folks have "Live off the government" in their career plan or choose this route without having had a few hardships and nowhere else to turn. Living on less than a fourth of my previous wages hasn't been a picnic, but I have been extremely grateful for a country that hasn't just let me completely rot in a gutter because my body gave out before its time.

Well on friday we are moving from san diego with 79° temps, to phoenix which will be 80°. Big change there lol. This summer we will be hating it. Howdy reoville!

Afternoon Reo-fam! Just got home and settling in a bit with a glass of wine. Temps went to 45 today so I spent hours chopping drains in the ice to let it out before we had a swimming pool in the parking lot. i love the exercise.

Spam is not one of my faves. My Mom forced us to eat in when I was young. (Also powdered milk, which I think is against the law in some states)

Big hugs for Jen. I didnt catch the post that angered you or maybe it was real life but I would gladly open a big ole can o' whoop azz on anyone who hurt your feelings. Just provide a name and compass heading.

Hope everyone is having the best day they can. Got a nice sized delmonico goin in the broiler with some shredded spaghetti squash and a big salad. What's on the menu tonight in the lounge?

No worries, Ed...I'm over it. Just adding my :2c: to an innocent comment that wasn't directed at anyone...just a little reminder that not everyone in the system is there by choice.


Dinner isn't started yet. Either pasta and tomatoes or a good ol' greasy hamburger.

ohhh, I just remembered I have BACON! Maybe a bacon burger with sauteed onions.

HRH has been running about all afternoon having carjacked me at lunchtime! Of course she went shopping, but her main rationale was to make dentist and doctor's appointments.

That is the reason she is giving me for tonight's dinner of meatballs, potatoes and brussels - which is fine with me!

I assume that if she is so nervous of the dentist they are considering gassing her - the least i can do is to give her an idea of it, which is precisely what i shall do after eating that!

Well I made fried rice for the first time. It was good...long grain brown with sauteed peppers and onion, scrabled eggs, soy sauce all mixed up and sloppy joes too. strange mix of foods.

Hi Ed. Ed, I got a complaint on you from the Director of Services in Reoville. Apparently you've been leaving your garbage out on Tuesday for pick up on Wednesday. Just a warning here. We don't want this to go any farther if you get my drift. Oh yeah, one of your neighbors complained about the height of your snow banks around your driveway. THey find them to be a hazard. If you could just chop them down to size I'm sure everything will be forgotten.
