My personal (limited) experience is that my cartos arrived with less than an optimal amount of juice in them.
I wish that I had seen a warning about making sure they're filled before using them the first time, it would have saved me some nasty flavor and prematurely roasted cartos.

Many of the cartos are not filled properly. I think that's the main reason I was killing so many early on.
