What makes higher end models better?

I have the TW Tornado, which I'm pretty happy with. However, I do keep seeing the higher end models being mentioned in the forums, such as the Chuck or the Silver Bullet. But the thing that confuses me is that these models use the same atomizers that lower end e-cigs use. I understand that these devices can provide up to 6 V rather than the 3.7 V. Of course, there is the option of using the low resistance atomizers, but I've yet to find a flavor that tastes better/same as regular attys. At best, they've all tasted bad for me. That's getting off topic, so the question is what makes these devices better other than the voltage?

Aside from polish and possibly longevity, nothing. Pretty much every mod available right now is just a different case for a battery. Changing voltage doesn't even matter anymore with readily available low resistance/high resistance atomizers. Flavors don't really have much to do with the atomizer, unless you mean that at higher voltage you're getting a burnt taste, at which point you want to lower your voltage or increase your resistance.

The best analogy right now for 99% of the mod market* is cell phone covers a few years ago when they were the big thing. Do you want a phone with a hello kitto, your favorite sports team, or a carbon fiber looking case - it's not going to change how it acts.

*Assuming battery size is the same. Going from a 10440 to an 18650 will mark a huge difference in enjoyment, as you'll get a more consistent vape for longer and go 2-3 days between charges instead of 3-4 hours. They are the same voltage, but a battery with a higher mAH rating will let you vape at the peak voltage for much, much longer.

In addition to the factors that nerf mentions, some mods have better workmanship than others. These tend to be the most expensive.

Some mods have internal juice injection: no carts or dripping required.

And the mods all look and feel different. [For example, contrast NHaler's XHaler, Magnum, and Phidias Woodimus: not only different batteries and atomizers, but very different sizes and shapes.]

And pay attention to the position of the button on each mod. Would it be comfortable for you? [I happen to hate the ones on the bottom. You might love them.] Think about size and shape, color and design, and, of course, cost.
