Italian sausage, home made macaroni salad and pickled beets. Last night was steak, green beans with black olives (and garlic and crumbled bacon) - sprinkled with parmesan and bakes potatoes. Tomorrow is bbq ribs and chicken (haven't figured the sides yet - but probably have broccoli slaw and maybe some bakes beans.)

Absolutely MK - what time can we expect you? And it's hot, hot, hot! here - the humidity is very high today -wear shorts.

Oh MK - I have a recipe for a frozen pie which you could convert to sugar free! It starts with the premade graham crust - you use cream cheese and blackberry jam (which I'm sure you can use the sugar free variety) - if you want me to dig it up - just let out a yell!

Tonight, I'm making TexMex Hamburgers...delish!! Here's the recipe if anyone's interested!!

Tex Mex Long Boy Hamburgers - served on large panini style buns

Burgers
2lbs ground SIRLOIN
steak sauce (like A1), about 1/3 of a cup
palmful of corriader and smokey cumin
use onion and juice 3-4 tablespoons. use a grater and do so right over the meat so the juice lands on it (half of a small to medium onion)
grate 4 cloves of garlic over the bowl next
lots of coarse black pepper
salt
drizzle evoo (extra virgin olive oil) over top
mix
make burgers into oval shapes thinner in the middle and thicker on the sides to ensure even cooking
top with shredded sharp cheddar cheese after burgers are flipped and leave the cheese on there so it's melted by the time the salsa/guac. is ready

Salsa
chopped, seeded roma tomatoes - one tomato/person
palm full of chopped flat leaf parsley
one seeded jalepeo
half small red onion - chopped
lime juice from one small lime
pinch of coarse salt
mix together and let sit

Guacamole
one ripe avocado - make sure it's firm but has some 'give' to the touch
juice from one lemon
grated onion
garlic paste = one clove garlic
1 jalapeno seeded
salt
mash it up to make guacamole

Just stuffed peppers here. I use the red and yellow for the milder, sweet flavor and let them simmer on the stove until tender. The real secret is that I use V-8 as the broth rather than just plain tomato juice. I also shape some of the meat/rice/ roasted garlic mix into meatballs for the kids since they won't eat the peppers.

I made spaghetti tonight..with extra for freezing. I make mine with hamburger and Italian sausage. Today I used my own tomatos! I did use canned sauce but instead of any canned diced tomatos I used mine. I chopped yelow and red tomatos and threw them in. I also used my own basil and oregano. Mike said it was the best yet!:D

You ladies put me to shame everynight! I can't let my hubby read any of this. I do have a good excuse tho..................really. We're remodeling the kitchen and I can't cook. It's been that way for over a month and I'm so ready for it to be done. I would love to yell at the contractor but guess who it is??? Yip the hubby. So I'll cook when I have a kitchen again.
