This is pretty much the green peas and hamburger dish I was talking about. They've used mushrooms in this version (my grandma never used them). My grandma's version always seemed to have way more peas, too.

Scoop out the potatoes from the skin. Twice whipped, with cheese (cheddar works well). Stuff them back in the skin.
