Ive found that as the coil ages a tad, there is a build up of carbon/gunk that increases the surface area of the coil and it acts as a sponge to hold juice. But as the carbon buildup increases it then becomes more like an insulator and keeps the heat concentrated at the wire thus increasing the capacity to burn the juice next to the wire under all that carbon build up making it taste nasty.

Most coils do have a slight break-in period. Regular coils could be a few puffs - maybe a tank of juice. Ceramic coils can take at least a day.
In a perfect world you would start with perfectly clean and burnt-in wire ( I think the chemical makeup) changes after some heat cycles. Your wicking material would be perfectly clean and broken in but that's never the case either. I guess it just takes some heat cycles to get everything working together

Why is it that coil heads seem to perform better after a couple of days of use?

I've been using rebuildables for years now and am used to dry burning and rewicking fairly often. That means I get a new 'head' often :)

What I find with a clean build is it takes less power to get the same amount of vapor for a bit. As the coils gunk up they need more power. It doesn't take long for most of that change to happen, then it stabilizes for a long time after which things go downhill fast.

I set up my builds so they perform best for me in the long intermediate zone when the build is a bit gunky and I imagine pre-built heads are designed the same way. I really enjoy the early break in period, flavor is a bit 'cleaner', but I am lowering the power a bit to compensate for the increased performance. I also set up for a medium heat vape, so I'm not close to burning juice even with the coils really gunked up.

If I don't wick the coils right, either get too much or not enough wick material in a coil, or don't get the wick tails placed right in a RTA, there is an off flavor in the build specially at the start. If I didn't get things too wrong that goes away after a few ml of juice, but usually I just fix it to get that clean build experience.

I don't really know not having used coil heads for a very long time. Back when I did I ended up rebuilding them every day, and had 25 of them in rotation. It got ridiculous after a time. It quickly became RBA time, and the RBA I ended up with was a genny. I'm still using that 3 years later, and still quite happy with it.
