A new "What's for Dinner?"

Carrie, that is one of my favorites..do you by chance have the recipe?

OMG so easy..

1 lb chuck steak/roast (or any beef that's on sale)
1 small onion chopped
1 clove garlic minced
2 tsp of oregano (I scaled back to one tsp)
2 beef bullion cubes + 4 cups water (or 4 cups beef broth, don't like all the salt)
1 bay leaf
1 can mixed vegetables (I use a 10 oz bag of frozen)
1/2 c uncooked barley

Cut up beef in small pieces and brown in a bit of olive oil, add onion and garlic and cook until onion is soft. Add oregano, bay leaf, bullion cube and water. Bring to a boil and simmer at least one hour until beef is tender. add vegetables and barley and cook over medium about a 1/2 hour until barley is cooked.

I had no idea Florida got hit so badly. Gosh, you guys stay safe! At least if all that darn damage has been caused, it will cause new repairs which means more jobs for ppl - still it's so disheartening to see so much damage done.

Mary Kay how did your gs make the Cuban sandwiches? Did he use both cooked pork and ham? What kind of cheese did he put on it, Swiss? That makes me sooo hungry.

Carrie, thanx for the recipe. I like adding barley to my stews. And the way you do it by buying the mixed frozen veggies is the most economic way. Buying organic veggies is pricey, but when you buy them by the bag like that, they're very affordable. Good call!

ETA: I'm going to have another green smoothie for dinner. All the rain has made LOTS of weeds, so I'll have a dandelion/ginger/pears one tonight. At least this spring cleanse is yummy, but boy would I like a nice big chef salad with lots of boiled eggs, garlic/cheese croutons. OTOH, it's got to be done, and every PM, I sleep so well and get up feeling so much more energetic. As a side benefit, I've lost 7 lbs of holiday/winter tummy-pooch.

Cuban sandwiches are made with Cuban bread (if you can't get try Italian or French) we use mustard on the bottom half..spanish pork (just seasoned slow cooked pork, any type will do) ham, Salami I add turkey..just cause I like it. The next layer is Swisscheese again you can use provalone or yellow..your choice. Then we top it with pickle slices, lettuce,and tomato. The top half of the bread gets mayo. Slice on a diagonal so you can get the end in your mouth..lol
True cubans don't have the lettuce or tomatos...but the cuban shops always ask if you want it or not. Note in the pic above..no lettuce and tomatos.
In Cuba the men went out to farm all day so the women wrapped the sandwich in cloth and the guys put them in their pockets. By lunch the sandwiches were flat..hence the practice of pressing cubans in a panini stye press today. Tampa was the first to add salami..could be because of the large Italian and Spanish population back in the day. The workers all took the cubans to work or ate them in the empoyee cafeteria in the cigar factories.

LOL, with all of that on a sandwich, you're right, I would have to cut several diagonals to get my mouth around it. It sure sounds and looks good. AllRecipes.com has a recipe for pulled porked prepared in the slow cooker that has gotten over 1400 5-star ratings from reviewers. Makes me want to try it.

Ruebens have also been a favorite of mine. Oh no, now salivating, LOL. Maybe I should stay off this thread until I finish my cleanse. Thanks for the reply and the interesting history of the Cuban san.

That sounds good keyzy! We had leftovers tonight. My son left here at 4 am to get to his kichen for work, got off at 2 and came her to pick up his clothes for his security job tonight. While he was here he said" Mom it will be 3 weeks before they can restring all the lines and get elec restored" (from a tornado yesterday) My mind reeled and I was thinking..good grief I need to make room for a fold out bed and and and..then he says "April Fool!" "the power is back already!" I almost didn't give him any leftovers!

Yeah, I hear you about the back. I hurt mine 2ce last month. I need to get it through my head that I'm not 20 anymore, so I shouldn't go lifting box springs and mattresses by myself. I have to very carefully watch what I eat, b/c if I gain weight, then my back gets tired. I needed one of those "strengthening the core" workout DVDs, so I got another Callanetics DVD last month. She (Callan Pinckney) specializes in back exercises. Shes' also the one Sarah Ferguson and Princess Diana flew to England many years ago to show them how to do the exercises properly and to check their form.
