I always suspected the polished finishes would be more prone to scratches
The chrome & polished are very different finishes. Chrome is a coating. It doesn't hold up very well at all. The polished isn't a coating. It's just the bare metal sanded to a high grit & buffed out with a compound. It holds up very, very, very well. That's why the chrome Provari's were discontinued a long time ago. I have 2 of the polished ones & they're awesome.
Regarding the polishing, pretty much any buffing compound made for stainless will work. I used the hard compound sold by Dremel to polish one of my KFL's to a mirror shine.
