it's all good, billmy boy made that pastrami recipe for me and while the taste was good the meat was rather dense. possibly because there was just one thin fat cap on the brisket.
i was referring to the texture of the meat and moisture content - since he got his brisket from an actual butcher i'll tell him to make sure the next one has more fat. his spices were excellent even though he admitted he had a heavy hand with the whole coriander - but that might have been a plusNo, not sure I even understand what you mean by "dense".
