No, not sure I even understand what you mean by "dense". Could the brisket have been too lean?

Funny you bring that up though. The last one came out so good that I did 2 more over the last week. Smoked them yesterday, will steam them for dinner tonight. I expect these to be a little better as I used better spices. I didnt have whole mustard/coriander seeds the first time, so I didnt get the "cracked spice texture in the bark.

it's all good, bill ;) my boy made that pastrami recipe for me and while the taste was good the meat was rather dense. possibly because there was just one thin fat cap on the brisket.
Yep, good pastrami needs some fat.

i was referring to the texture of the meat and moisture content - since he got his brisket from an actual butcher i'll tell him to make sure the next one has more fat. his spices were excellent even though he admitted he had a heavy hand with the whole coriander - but that might have been a plus ;)
