Sorry Charm! I'm not going to make it. My moms having surgery in the morning so ill be spending the next couple of days with her.

    OK, here's another take on the burrito recipe....but we call them Chicken Enchiladas. Top with whatever you prefer.

    I get a rotiesserie chicken from the store, pull the meat for recipes like this and boil up the bones for soup/stock.

    Ranch Chicken Enchiladas
    2 cups cooked chicken
    ¾ cup shredded cheese, Mexican blend
    ½ cup bottled Ranch dressing
    ¼ cup sour cream
    2 Tablespoons chopped green chilies (or more, to taste)
    1 large can (19 oz.) Enchilada sauce
    4 large tortillas (8 – 10 inch size)

    Preheat oven to 350.

    Combine first five ingredients and mix well. Pour a bit of the enchilada sauce in the bottom of a baking dish sprayed with PAM. Divide filling between 4 (or 5) of the tortillas; roll them up. Put in baking dish, seam side down. Pour remaining enchilada sauce over top. Top with more Mexican blend shredded cheese (as much as you want).

    Bake for 25 – 30 minutes until hot in the middle and cheese is starting to turn golden. Serve with Salsa and more sour cream, if desired as well as jalapenos, onion or whatever :)

    Yeah, I had a feeling that was the case. I'm disappointed , but understand!

    I did, there were about 60 people there...give or take lmao...it was pretty big.

    Did you actually sell anything, or just give it away, like last time?

    Off to try and get the last 5 episodes of The Walking Dead watched before the Magoo gets here later this week. BBL

    Charm, (((HUGS))) for you too. I'm a serious homebody, and I really love solitude. Your cabin sounds like absolute heaven!! I don't blame you for not wanting to come back to the RW!!!

    Hi Lori! It is heaven, for sure. Probably partially because it only has weekend & vacation associations, but one of these days, I'm gonna find out how it stands up to full timing!

    Well, I gotta get moving toward the bed - got a few things to do & need to be settled before Under the Dome starts (Falling Skies is recording). Nite Lurkers! I'll have the coffee ready to start.

    Hey Charm & Lori! So sorry Lori! I just wasn't feeling myself for some reason this weekend. I was off 2 days then went back on Friday & came home completely exhausted!! I think the 3 days with mom will do me some good. Thanks! Hopefully all goes well with mom! She's having surgery on her foot. She won't be able to do much the first couple of days & she'll have a cast up to her knee for about a month from what I'm told. They'll be putting some screws in her foot & after the cast she'll be wearing one of the boots. The trick is going to be getting her to sit still after everything. She's such a busy body!
