I've been up since before 2 a.m.; guess I'm stressin' a bit, lol.

If you guys like the Mexican & simple you might enjoy this:

Enchilada Cake:
8 totilla's
8 ounce can of enchilada sauce
Shredded Chicken (we prefer hamburger)
Shredded Cheese
Layer in a round cake pan
Bake about 20 minutes or so at 350 I think
Of course you can add whatever you like to that, tomatoes, black beans, whatever
I like to serve ours on top of salad mix
