Natural Satsuma Mandarin DIY

I have been using unflavored DIY juice since last summer and loving it. I promised myself that I'd try to DIY some juice using the Satsuma I have growing out front once the fruit ripened. Well, it's harvest time.

The Satsuma is a small mandarin orange tree.

Washed and ready. I used some waxed paper on the cutting board for extra sanitary protection.

What I'm using here is natural Satsuma zest. Zest is the orange part of the peel. A sharp paring knife was used to cut the light colored pith from the zest. All I wanted was the zest, cut into strips to fit into the 30 ml bottles I use. There is a kitchen tool called zester to do this job. I don't have one.

The cut and sized strips are put into a very small mixing bowl. To this, I added just enough Sailor Jerry rum to moisten all of the zest. I covered the bowl tightly with foil and a rubber band and let it soak for an hour. The alcohol disinfects the peel to a degree and also begins extraction of the Satsuma orange flavor.

Here is the 30 ml test bottle of Natural Satsuma juice. My base juice is shown in my signature. I have it sitting next to a bottle of unflavored juice that I made at the same time. This bottle has steeped for 18 hours and already has a nice light orange taste.

The juice is a little cloudy and has some suspended solids. I may run it though some unbleached coffee filter paper after it's done steeping. The juice is delicious as it is and I'm using it right now.

Did you evaporate off the Rum? Or do you add it to your base with the Zest?
No, I didn't attempt to eliminate the alcohol. As a result the juice is slightly thinned. The rum remaining in the zest was minimal. I don't taste alcohol in the vapor. The rum may not be necessary to make this juice but it does add a faint flavor element. there is lots of room for experimentation.

After taste testing yesterday after 18 hours of steeping I added a lot more of the zest and steeped to the 39 hour mark. The flavor is stronger. It doesn't taste like orange juice, it tastes like orange zest which is different but still tasty. I'm going to steep it for another 24 hours to see what happens.

Here is a follow-up. I was on the road most of the first week of the year so the juice spent a lot of time steeping in the refrigerator. Total steep time: 8 days.

I filtered the juice through two thicknesses of unbleached coffee filter paper. This is nearly 100% VG juice so I had to heat it before it would pass through the filter.

The color is all natural and so is the taste. The flavor is pretty strong now, in fact I wouldn't want it much stronger at all. Flavor complexity increased with a stronger vanilla note (from the orange and not the rum, I think).

Downside: The flavor is quite strong. I don't want to vape it over more than a half an hour. The juice is well-filtered. It looks very clear and shows absolutely no precipitation at the bottom of the bottle after sitting for two days. Still, the juice will darken in the carto and looks pretty nasty after a few refills. I don't expect the cartos to be good for more than a few days. The orange oil in the juice is probably the cause of this.
