I have been using unflavored DIY juice since last summer and loving it. I promised myself that I'd try to DIY some juice using the Satsuma I have growing out front once the fruit ripened. Well, it's harvest time.
The Satsuma is a small mandarin orange tree.
Washed and ready. I used some waxed paper on the cutting board for extra sanitary protection.
What I'm using here is natural Satsuma zest. Zest is the orange part of the peel. A sharp paring knife was used to cut the light colored pith from the zest. All I wanted was the zest, cut into strips to fit into the 30 ml bottles I use. There is a kitchen tool called zester to do this job. I don't have one.
The cut and sized strips are put into a very small mixing bowl. To this, I added just enough Sailor Jerry rum to moisten all of the zest. I covered the bowl tightly with foil and a rubber band and let it soak for an hour. The alcohol disinfects the peel to a degree and also begins extraction of the Satsuma orange flavor.
Here is the 30 ml test bottle of Natural Satsuma juice. My base juice is shown in my signature. I have it sitting next to a bottle of unflavored juice that I made at the same time. This bottle has steeped for 18 hours and already has a nice light orange taste.
The juice is a little cloudy and has some suspended solids. I may run it though some unbleached coffee filter paper after it's done steeping. The juice is delicious as it is and I'm using it right now.
