I had one when they first cam out, I definitely need to buy one again. You are right, they are perfect for marinating.
Beef and London Broil sounds great my man.
I just finished rubbing down my 10 pound chunk of fresh ahi tuna. and threw it in the fridge. No food saver, but that would have been awesome. I just wrapped it in a couple layers of cellophane wrap. I am marinating it with a salmon rub, salt, pepper, dijon mustard, espresso, onion and garlic powder. Then Sunday morning I will get up early, wash it off really well, soak it in a brine solution with 1/2 cup Salt, 1/2 cup sugar and black pepper in a half gallon of water, for two hours. Then I rinse it really well, pat it dry and let it sit in the fridge for about an hour to get the meat nice and sticky to help the smoke flavor stick to it. Then I will throw it on the smoker at 10:00am and let it smoke for the whole day.
Depending on the internal temperature, I may crank it up a bit, just before serving, but I am trying for a seared ahi type middle with a well cooked outside.
This is the first time I am trying anything like this, so wish me luck!

No the tuna didn't turn too dark that meat is so dense in comparison with beef, it didn't really do much. That is why I am letting it sit for two day in the marinade. I don't know if it is going to take the marinade at all.
Encrusted black pepper definitely sounds like a great idea.
