i made a different type of French onion soup tonight than I had ever cooked before...Saturday we had braised beef short ribs, and I saved the onions and carrots and broth from this braise. Today i sliced three large onions paper thin and sweated them down in butter...chopped the leftover carrots and onions from the braise, and also tossed in some leftover peas and carrots that were steamed. then I added the broth to all of this and cubed the meat from the beef shortribs into 1/4" pieces, left all this on a slow simmer while I mowed the property and afterwards took a quick 8 kilometer sprint on the old Austro Daimler bike around the neighborhood. Mmmmmm Mmmmmm good, I ate two bowls full
