4-1-1 Baby Back Ribs and Twice Baked Potatoes on my Davy Crockett. :)
First I used Dizzy Pig's, Dizzy Dust Barbecue Rub all over the ribs.
Cook them for 4 hours at 225°, spritzing ever hour with a spray mix of 1 cup Apple juice and 2 cups Apple Cider Vinegar.

Then after 4 hours I take them out and wrap them in foil with Brown Sugar, Butter, and Honey.

Then put them back in for an hour.

For the last hour I unwrapped them and covered them with Sweet Baby Rays Barbecue Sauce.
Scoop the potatoes and mixed it up with some Cheddar Cheese & Bacon and put it back in.

We had a rather slow week at work this week, 3-7 hour days and 1-7 1/2 hour day. I started the day thinking today was going to be the same, I got 9 1/2 hours today. It was a long day, but ended up with more hours than I have gotten this month. I have forgotten what working a 40 hour week every week is like, I have only worked 2 of them in 2 1/2 years. At least this year I have been getting more hours on average than last year, which was around 28 hours a week. I just was not expecting such a long day right before a holiday weekend. Its all good though 3 day weekend WooHoo! :)

I made it through the week! Today was heinous I wrote 14 notes and saw 16 people. I only have 6 notes left though because I used mah discipline. LOL.

It really was mind bending though.

Still no word from any one. My theory NOW is all the administrators are just sitting back, placing bets on who will CRACK first.

It ain't gonna be me, I will tell you that. I've gotten old enough that after some raging and storming I can just be like, "Screw it. It is what it is. It will be what it will be." I am like the sound of one hand clapping, etc., etc.

I am SO zen, I am going to practice loving kindness.... Toward the sociopath next door. I mean, I don't think that worked out so well for that monk dude who got exiled from Tibet, or whatever, but I don't really want to be THAT dude. WAY too much effort expended on being chill, I do think.

I have forgotten the forbidden joys of 3 day weekends that are paid holidays, until now.

I really need one. But, I'm also practicing so much mindfulness with patients, Marsha Linehan would be so disappointed in me if I blew up, and she is my TRUE therapy hero (besides my first therapist).

The husband is here, he has stocked up on food. I am quite hungry.

I had to go have a recruitment lunch at a like, authentic Mexican restaurant. I ordered the least authentic thing I could find without actually saying to the waitress, "What do you have that tastes the opposite of Menudo." LOL.
