This is one that I haven't tried yet, but I would if I still lived where I had a working kitchen.

Brandied Cherry Balls Recipe

42 Servings
Prep: 45 min. + chilling


Ingredients

1/2 cup dried cherries, finely chopped
1/2 cup cherry brandy
1 package (3 ounces) cream cheese, softened
1 tablespoon butter, softened
3-3/4 cups confectioners' sugar
6 ounces dark chocolate candy coating, chopped
1 tablespoon shortening

DRIZZLE:
White candy coating, chopped
Pink paste food coloring

Directions

Place cherries in a small bowl. Cover with brandy; refrigerate overnight.

In a large bowl, beat cream cheese and butter until smooth. Add confectioners' sugar; beat until crumbly. Drain cherries, reserving 2 teaspoons brandy. Add cherries and reserved brandy to cream cheese mixture.

Roll into 1-1/2-in. balls. Place balls on a waxed paper-lined baking sheet. Cover loosely and refrigerate for 1 hour.

In a microwave, melt dark chocolate candy coating and shortening; stir until smooth. Dip balls in chocolate; allow excess to drip off. Return to the baking sheet.

For drizzle, melt a small amount of white candy coating in a microwave; stir in food coloring until smooth. Drizzle over candies. Chill until set. Yield: about 3-1/2 dozen.

4 large Portabella mushrooms: brush clean, coat top and bottom with real butter

In a bowl, combine:
½ cup dry homemade bread crumbs
1 TBS finely chopped onion
1 tsp finely chopped garlic
One large handful of cilantro, chopped finely
One egg, beaten
½ tsp salt
Pepper to taste
½ cup Parmesan cheese
Mix thoroughly

Put caps in a baking dish and stuff with the filling, piling the stuffing high.
You can add shrimp or meat if you wish.
I lay a sheet of foil over the dish so they won’t get hard.
Bake at 350 for 30 minutes..
If you want the top browned a bit, put under the broiler just long enough to
crispen up the top.

Serve with a salad.

Okay, I'm here to save your Holiday dinners!

You're going to serve sweet potatoes (yams) right? Right. Healthier.

Most people eat about half of a serving and leave the rest. Right? Right.

Now they'll eat all you give them!

Whipped Sweet Potatoes

Peel two large sweet potatoes. (use fresh yams - not canned)
Cut them into about 1/2" to 1" slices
Boil until tender..this only takes a little while
Drain good as soon as they are tender add 2 to 3 tablespoons of real Butter and a dash of salt
Add about 3 tablespoons of Raw Brown Sugar and sprinkle with butter buds
Whip with enough milk to make them the consistency of whipped potatoes
On each serving, add a small pat of butter and sprinkle to taste with cinnamon

We eat these in place of white potatoes. They are good with most meats
including steak and especially chicken or turkey.

And I'd suggest making a lot. Everybody is going to want a second helping!

I thought I'd add my own version of sweet potatoes. It's a family favorite, and I've only set the oven on fire once!!! WATCH the marshmallows!

Into a big casserole dish dump & stir these;
2 large cans of Yams or Sweet Potatoes, drained.
1 large can of Pineapple (chunky or crushed) Including it's juice.
1 cup brown sugar
Half a cube of butter cut up.
Bake covered at 350 for 45 minutes.
Top with marshmallows & place under the broiler for about 3-5 minutes, until browned & puffy.
Do not stop watching. The marshmallows will puff way up, and if they touch your broiler you'll have a fire & have to put it out with an extinguisher, which will ruin your food. :)

Simple Taco Soup



Ingredients:
2 pounds ground beef
1 (1.25 ounce) package
taco seasoning mix
1 1/2 cups water
1 (15 ounce) can mild chili
beans
1 (15.25 ounce) can whole
kernel corn, drained
1 (15 ounce) can black beans, rinsed and drained
1 (14.5 ounce) can diced
tomatoes
1 (10 ounce) can diced
tomatoes with green chile
peppers
1 (4 ounce) can chopped
green chilies
1 (1 ounce) package ranch
salad dressing mix

Directions:
1. In a Dutch oven or large kettle, cook beef over medium heat until no longer pink; drain. Add taco seasoning and mix well. Stir in remaining ingredients. Simmer, uncovered, for 15 minutes or until heated through, stirring occasionally.


The longer this cooks, the better it tastes IMO.
