The brussel sprout thing isn't really a "recipe". But...

For every 2 pounds of brussel sprouts:
1 pound of thick-sliced bacon
1 bunch green onions

Trim sprouts, cut in half, steam until tender, not soft/mushy.
Cut bacon into small pieces.
Trim roots off green onions, trim about 1/2" of green from the top.
Mince. (The onions. Not you.. around the kitchen.)
Brown the bacon as usual, adding onions during last few minutes.
Pour bacon, onions and ALL FAT over the sprouts and mix together.
Ooops!!!

That procedure is if it will be served immediately.

If you are making it ahead of time and then reheating, steam the
sprouts LESS... make sure they are still firm. Reheating will soften
them to "tender".

Good morning, Dale. Tibs & Classy.......and 6 am is a LOT better!

Read back about 'stock' and dh was busy most of the day yesterday in the kitchen making bone broth from a freshly killed pig. Son brought it and wow.......just wow...... It's still simmering and he was up around 4ish tending to it. Glad my baking is done! lol
