LOL, you must be reading my mind. I was just asking her if she had a recipe for making pickled eggs!

TT, ask Mrs TT to get a big glass jar. Now take canned beets, onions, vinegar and hard boiled eggs and soak them in that until the eggs turn pinkish from the beet juice. That is really good pickled eggs :)


My mother used to make pickled eggs like that. Used to use BIG pickle jars from the warehouse stores... We eat purple eggs till they came out our ears! My dad and mom would eat the beets.. not my favorite. But the eggs were awesome.

Hiiiiiii TT....Welcome back hun and I am glad you are finally out of the hospital. After posting last night I thought "Dang, I forgot to leave TT a message". So I am back doing that now lol

Another day of craziness and looking for a child therapist for one of my SOs children..He already has gotten suspended for 1 day from freaking Kindergarden *sighs* Long journey ahead but we WILL get through this. I shall be back online this weekend...hopefully.

They are a big thing [pickled eggs] up north? I didn't know that.

They sit on the shelf here next to the pickled pigs feet and the Penrose sausages...the pink row at the supermarket.

Or by the Slushy machine at the Rainbow Gas Garden. More pink stuff.

That pink stuff would be mandatory in every beer bar and/or man cave is interesting. We may chase pink stuff, make fools of ourselves over it. We'd not be caught dead wearing it.

Bring the beets, the onions and the vinegar to a boil first, then add the eggs. Put in the jar and let it cool; store in the fridge is better. A pinch of sugar and a small bit of allspice (very small) adds a nice cultured touch.

It speeds the pickling time up that way.

Of course, that's just what I've heard... :)

Nooooooooo!!!!!!!!!!!!!! That would not taste at all the same as what I make. No sweet and no spice :facepalm: Trust me :) We have enough culture already in these parts.

That is it! I love those things! You know what else TT? Good source of protein = good for diabetics and a quick snack that you can just grab on the go. Literally LOL!!!!!!!!!!!!!!

Not a lot of sugar, just a pinch. Or use a tinier pinch of baking soda - it takes the bitter bite down just a hair....and the beets taste better that way, lol.

We use white vinegar, TT.

Better do what Salem says, though, after all it is Yankee food... :p
