I did 2 off the wall custards yesterday. They turned a nice shade of rust lol. I have them sitting in a dark place not sure if I should take the caps off for 24 hours or just let them sit. That is still a mystery in the making I think.
Unless the flavoring is an alcohol base there's no need to leave the cap off. Half way through the steep process just loosen the cap to let built up air escape then recap and continue steeping.
