and now for a couple bacon recipes...
7-layer salad
ingredients:
BACON (cooked crisp and cooled)
lettuce
garden peas ,celery, red peppers, green onions (I leave out sometimes)
whatever "salad-type" thing you like.. just so you have 3 veggies in addition to lettuce
dressing (instructions below)
parmi cheese
To layer: get a big bowl and add layers IN THIS ORDER (very important to preserve freshness)

veggie choice#2
veggie choice#3
BACON (break into pieces)
Dressing: spread mayo mix on first covering as much of the salad as possible, then spread the sour cream mix on next covering as much as possible. Do not stir the two together, but it's important to cover any holes (size of bowl is important here.. tall and thin is better to make this work)
Parmi cheese to liking
Can be made a day ahead (actually better that way!) DELISH!!
to make dressing: mix 1 cup mayo with 1.5 tsp vinegar, in separate bowl mix 3/4 cup sour cream with 1/4 cup sugar
and
Old World Sauerkraut Supper (like a Reuban melt)
in crock pot
3 (plus) strips of bacon, cooked and cut up
1/4 cup onion
2 Tbsp flour
1 can sauerkraut (I've used fresh cabbage too.. just flash it first)
2 Tbsp brown sugar
5 links Polish Sausage (I like the Hillshire cheese brats for this)
1/2 cup water
1. Sautee' onions, boil sausage 5-1o mins, fry bacon till crisp, drain, reserve drippings
2. add flour to bacon to flour drippings (make roux) stir in bacon, onion
3. drain and rinse kraut. Layer in cooker 1/2 kraut, bacon mix
4. add sausages, then remaining kraut and bacon mix (water if needed)
Cook on high 3.5 hours Serve on kaiser rolls (good with melted cheese and thousand island dressing too!)
