I actually got a night off tonight as we had dinner at my nephew's Bday party. But last night it was my own version of jambalaya and bread pudding for dessert (had a half loaf of french bread that needed to be used up).

We're doing flank steaks on the grill tomorrow night. I really need to get my menu set for this week though.

Mary Kay, I find that chili always freezes well and can stand alone or as a topping for burgers/dogs too. If that's too cold weather for you, I love freezing quiches. That and a salad are great for hot weather.

last night, BF and i made applewood smoked bacon cheeseburgers topped with caramelized onions, and garlic fries on the side. the bacon and fries were incredibly tasty and i got it from trader joe's. if you have one near you, i highly recommend getting them!

Easy Cheesy Chicken n Rice
4 small breasts of chicken-seasoned with salt and pepper and 4 spring onions sliced-about 2 and a half minutes each side-take out of skilet-add 1 tablespoon of butter and start with 4 cheese rice a roni-saute till light golden brown add 2 and a quarter cups water-when it starts to boil-turn to low-return chicken and onions to rice and add slivered carrots and broccoli tips-cook covered for 20 minutes. Yum and easy.

We just finished up the green beans and red potatoes cooked with bacon. It gets better each time you heat it up, lol. You southern folks know what I'm talking about. It's all gone now, but I can't wait for the next batch. If you've never tried this, you don't know what you're missing. rsmith76

I LOVE fresh green beans, potatoes and bacon. My IL didn't put out a garden this year so I will miss them.............I guess I could go to the local farmer's market and BUY them :)

My mom made it with ham hocks instead of bacon....yummy.

Spatzle is a type of egg noodle but it's more like the consistency of gnocchi...like cushiony. You have to make the dough and push it through a colander or a slotted spoon into the boiling water (unless you have a fancy spatzle maker). Then I'm going to saute them in some butter to give them some color afterwards.
