How funny Luv2 lol... :) will always remember our family time it makes you realize your parents really are human lol lol lol lol... I too try not to visit this thread too often,, makes me hungry lol..

I made spegetti lol tonight... gosh it's been a long time.. Anyone have a recipe of a sauce made with a goat cheese I use to have it all the time when I was in Germany, just had the best texture to it....

Hey RK! I know where Salisbury is- go through there sometimes... I actually am not from here- I was a military brat and then married into military... My dad was stationed here 5 times, same post- I met my husband here and we have been stationed here 3 times... he got out due to medical after 13 yrs and left this area- 3 different times our civilian jobs moved us back here,.. So, we have been here this time about 9 yrs and kind of have accepted we may be here awhile... LOL

Bless Dred's heart! MaryKay, tell him we appreciate that contribution! Sounds great & I love squash!

I also try not to do too much Fast Food- yeah economizing is great excuse but mainly, my body can't take it too much anymore- 8-o LOL Strange things happen...
Patricia, it was so funny reading your post and seeing my husband sitting at the TV w/ the Wii remote playin the Wii version and seeing the board game set to the side of the couch where the kids had left it the night before to pick up in another game after homework... A great eye-opener,
Also, I guess it is a great time w/ th ekids and we don't have to spend a thing! Woo- Best part! LOL
Dinner tonight... BBQ Chicken cuz I was lazy... No, really, I am tired and my arthritis is acting up... my knee, my hands, my entire back... I took a muscle relaxer instead of aspirin or aleve... I don't know what I was thinking- so, I ended up fatigued today- Hubby was going to cook but I told him to check all homework since I am foggy in the head...he'll also get the little kids settled and bedded down later.

I've so far made it an easy week for dinner. Burritos last night. I used to make homemade tortilla's but I could never bring myself to buy flat out lard to make them taste right. So instead I buy wheat tortilla's.

Tonight was manwich. Kids had company and I forgot about dinner.. HAHA spent to much time browsing the site. And was OMG its 7:30pm. Made dinner to find out the company I had didn't like it. He ended up with peanut butter and jelly. But his parents always feed him before he comes over. So it was a snack and I didn't have to feel to bad about it.

Tomorrow night. Green Chili Chicken Enchilada's. I have to make 2 9x12 dishes of this. Hubby gets one for himself and the kids and I get the other. The kids and I have leftovers for the next day. Hubby usually has enough to take some for lunch.
He is one of those men we dislike. He is 148lbs and NEVER gains weight. I met him 13 years ago and he weighs the same now as he did then.
Me on the other hand.. 3 kids.. lol

Our grocery had "buy 1 get 1 free" beef roasts last week. I have NO idea what cut of the beef they are... but it's the same roast my Mom used to cook in her electric fry pan... and I always hated them! They just seem so dry and tough! :( I'd never tried cooking one in the crock pot before.. so decided I'd give it a try on Wed. Followed a recipe in a crock pot cookbook I have, putting a can of mushroom soup in the bottom of the crock pot, and sprinkled a packet of onion soup mix over the roast. It came out pretty good (in it wasn't "dry" but still couldn't cut it without using a steak knife!:mad:) Hubby loved it (good thing because there is enough for another night... plus 3 more roasts in the freezer!) Was going to make the "mess" in the bottom of the crock pot into a gravy... but it just looked tooooo nasty to me!

From now on if I can't cut my beef with my fork... I don't want any... I'll take a nice moist chuck roast any day! ;)

Mixxy, cook one of those roasts in a crock pot, just covered in water, salt and pepper. Let it cook until you can shred it. (discard the fatty stuff and stringy tendons..re-add just the shredded meat) Then add a couple of cans of kidney beans, onions and tomato sauce, season it with chili mix and have a nice pot of shredded beef chili!
That's a great way to use tough cuts of beef.

What is the roast shaped like? Flat like a chuck roast, or humped up like a rump roast, for instance?
And is there a layer of fat across it, or along the edge, or what?
Whole trick to cooking good roast is getting it browned all over first, and then cooking it really slowly. If there is a fat side, then put that towards the top of the pan. In the tougher cuts of beef, if you cook them fast, then the connective tissue gets all tough and stringy. But if you cook them slowly, and don't let them dry out, then it will all eventually get tender.

I do mine on the stovetop, because I have a really heavy dutch oven kind of pot that I can use. I brown each side until it isn't burned, but next thing to it, put in a little bit of water, but not much, and then turn it down as low as it will go, and leave it alone. If it is a big roast, it may well cook all day that way, and it will come out tender, with great juices for gravy or whatever. And the house smells great!

Mmmm, Mixxy, It still sounds so yummy! I love roast of any kind- I am an easy sort I guess... LOL
If I ever get a cut that seems a bit tougher- I love to take my buttered rolls and put a slab on it and eat like a small sandwich w/ every bite of my carrots and potatos... Mmmm!
Well, we are having the famed Chicken & Dumplins tonight... & actually it is ready- so just waiting for the older boys to get home from school activities and everyone can eat, get homework/chores done, watch some TV/play Monopoly, shower and bed... Friday will be an easy night- I do either pot luck. which won't happen this week because we don't have enough leftovers (hardly ever do w/ 5 kids) I will be making a strombolli probably w/ some dip and various fillings for grands, tortillas, or crescent wraps.
The kids love this and I can take the extra and make more "pockets" and put them in the fridge for snacks or lunch the next week-
& if we stay out and about Saturday too long- we already have ready made to eat too-
I got my DIYFlavorFlavs today so I am a happy camper until the boys get home- LOL

Hi ladies, just found this thread and thought I would say hello! Now I have a place to look for some dinner ideas .. my biggest problem is deciding what to cook each night. Haven't had chicken & dumplings in a long time, have to put that on the list. It's eggplant parm at our house tonight, better get working on that now!

ooooo! Everything sounds so GOOD!!

Tonight I made roasted turkey slices in gravy (just had them slice it at the deli), mashed potatoes and corn. has anyone tried the frozen mashed potatoes from Orieda? They were actually pretty good and very easy to make! (the hubby HATES the flakes,lol!)

Last night was build-your-own tacos.

I'm thinking about making the classic my mom always made - Campbell's cream of mushroom soup baked with chicken and rice. Haven't had that in a long time!

Tomorrow I'll probably make my "famous" Georgian Curried Chicken. It's soooo easy and tastes so exotic. And my family just LOVES it!

Tonight was fried spaghetti, mashed potatoes and fresh pea's. It was so good!

Tomorrow is stuffed bell peppers twice baked potatoes, fresh corn, and maybe mac and cheese. Daughter doesn't like anything green so she can have mac and cheese.

Check out Betty crockers cheeseburger pie. I add green chili and onion to it along with more cheese and it is yummy.

Thanks all -- for your secret tips on cooking roasts ;) I didn't brown the roast before cooking it, so will do that next time. I do believe that tough cookie was called a "rump roast" and was like a round ball. I warmed it up in foil in the oven for dinner again... and funny that it did seem more moist the 2nd night... but still needed a steak knife to cut it. :rolleyes:
