Different chemicals vaporize at different temperatures and some leave residue. Even PG and VG have very different vaporization temperatures. Usually food flavorings don't disclose all of the chemicals in them so it's mostly just a warning. Most won't leave anything behind on the atomizer but some might.
Many chemicals that aren't soluble in water are soluble in ethyl alcohol, so some flavorings will separate in the mixture unless you mix them with alcohol first. Ask your chemistry professor if you want more details.
