Wait a second you don't have a surface planer????? If not you are more skilled than you even realize. Making thin stock without one is a major undertaking, I just tried. If your building these without a surface planer and getting those results, I hate you...lol. Kidding of course.
When I was over there in 1980, there was a little store a block away with a 4 foot counter with just cold cuts. Just tell them how many grams, some salted butter and a couple brotchen. You were set.
