I have read that horse is eaten in France. Now I had ostrich and liked it, but it was in a burger form not steak. I don't think anything would get me to eat a pig brain souffle - must have been one big trick. Buffalo I found tough. The restaurant kept talking it up like it was a delicacy, it fell far short of our expectations, too. Was the turtle down in FL or over more towards LA? I don't think they allow you to eat turtle anymore, I could be mistaken. Lots of interesting foods you have tried. I love trying new things. Won't do chitlins though.
Is the bear gamey tasting?
I've been lucky (unfortunate?) enough to get to try quite a few exotic (some just friggin' weird) things ... I was so disappointed in the buffalo steak I tried (I think it had more to do with the restaurant though than the meat), so I'd love to try it again. Horse is not as bad as one would think -- tastes a lot like beef. And yeah, a lot of things --rabbit, turtle, snake, all really do taste like chicken -- just tougher.
The worst ever though was a pig brain souffle (that I was tricked into eating-- I'm allergic to pork!), and ostrich ... the pig brain souffle was beyond disgusting, and the ostrich left such a horrible aftertaste that I had to go home and brush my teeth 5 times just to try to get rid of the taste.

......no, no I can't
