Ladies.....let's get fit!!!

I didn't have any sandwich stuff, as I wanted to make sure the bread turned out okay first, but my daughter made a puffy cheese sandwich and said it was the best ever.

I was surprised that it didn't take any oil in the batter, just the cooking spray. It got surprisingly crispy.

Class wife, are you doing low carb? I guess I should quit talking about it at any rate. Sorry!!!

I basically had *you know what* for supper. Not too healthy, but I had a pretty healthy lunch of taco salad with ground turkey, southwest corn, and low fat refrained beans.

No exercise to report today. :(

Sliced up some eggplants thinly and rubbed them with a bit of olive oil and put in the oven (350) for about 15 minutes. On a separate pan I placed 4 slices canadian bacon and put those in the oven with the eggplant. While they were roasting I mixed up some ricotta, mozzarella, balsamic vinegar, pine nuts and basil.
Pulled out the eggplants and smeared the cheese mixture over the eggplants thinly and rolled them up and stuck toothpicks through them and placed the rounds on top of the canadian bacon and put back in the oven for about 10-15 more minutes. Made for a great side dish.

that sounds fantastic. it would work as a main dish for me. almost makes me wish that i cooked.:laugh:

It wasa 4 block walk from the hotel to the office where my meeting was - so i did get some exercise on my trip. whew! :)
this morning i got my mini workout in (sit ups and light weights- so that article about strength training was timely- thanks Emmajo). Even better, since it's in the mid-50's here- I took the beasties for a walk/jog. YAY! they're tuckered out and i feel great :) I hope i can keep that in my mornign routine- but like Cisme, that requires cutting back on the morning computer time here .....hmph.
