It's kind of a malty flavor to me Smitty.

You might chuckle at this but the first thing that comes to mind is celery. My wife is a tester for McCormick so I am gonna have her try it and pull the flavors attributes out if she can.

Ever have a Chicago hot dog? No ketchup. Mustard. Just onions, relish, sport peppers, a pickle and celery salt. They're awesome.

Sounds good but my poor tummy wouldn't be able to handle that. In my later years the peppers come back to bite me..

Ok you definitely have my interest with the picture.
I've never put anything on my dogs but mustard and onions.

You gotta get the celery salt...that is key to the taste. Don't go too heavy with it though. Doesn't take a lot. And a genuine beef hot dog...none of that turkey crap or ground up road kill.

What is it about Chicago style relish that makes it neon green , is it sweet relish ? I put jalapeno's and Tabasco on my hotdogs so I get the sport pepper thing just curious about that relish .

I don' know what's with the neon green. Most places don't have neon green (but I've seen it). It's just plain relish color at most places. I would not call it especially sweet...perhaps mild/medium sweet. The dog still is the key. Most Chicago dog joints use Vienna or David Berg. All beef of course.
