Our Christmas was a good one and the grand/kids were a delight......oooh, but like Janet says, they do wear you out....the 3 older ones are no problem as they're past that excitable stage, but the 2 younger ones are full of excitable energy! By the time they left, I found myself taking full sighs of relief......LOL.....oh, and the quiet afterwards was almost.....almost......deafening. We had so much food leftover, and like always, I made too much.....but that's the way I roll. We had our usual desserts including the birthday cake for Jesus......couldn't touch a bit of any of it......just too full, but won't have to cook for at least 3 days.Good morning Bea and whoever else is up. It's 25 here this morning with a heavy frost. Going up to 37. At least the sun is shining a bit, but there's lots of clouds.
We'll be tidying up here today in anticipation of the family coming to celebrate Christmas and Brody's 2nd birthday tomorrow. Yesterday I made potato salad, deviled eggs and pineapple casserole. I'll put the ham in the oven early tomorrow and then set the food out so we can graze all day so I don't have to spend the day in the kitchen. The cookies and dobas torte are already made and we'll have birthday cake as a separate celebration for Brody later in the day. We'll see how many calories we can consume in 1 day and deal with dieting on sunday.

O, how so terribly sad.....that gal must be feeling so horrible.I want to ask a favor, can you add my neighbor to your prayer list or send good thoughts and positive vibes for him. He is a retired teacher and his granddaughter lives with him. The GD was grilling on their enclosed patio and left the grill on with the top open. She went inside for some reason or another and needless to say, the house caught fire. Talking to the Fire Captain, the house was a total loss and they also lost one of their dogs in the fire. The reason I was talking to him was that the first unit on the scene cut the corner a bit too close and came over the curb and ran over part of the yard. I told him not to worry about it. I can take care of it when the weather clears up.

Thanks Janet. It sounds delicious. I can think of a few gatherings where I can bring that dish but it has to wait until I can be in a room with a bunch of people…after the vaccine.Absolutely. I love sharing easy recipes that are delicious.
Baked Pineapple Stuffing
1/4 lb butter or marg. (I reduced this to 3/4 stick of butter)
1 C sugar (I reduced this to 3/4 C)
4 beaten eggs
1 Can crushed pineapple - don't drain
4 slices bread - cubed
Butter casserole dish - mine is 9-1/2 x 6-1/2"
Cream butter and sugar
Add eggs
Stir in pineapple then bread cubes
Pour into casserole dish (I set mine on a cookie sheet because it did bubble over a bit)
Bake uncovered 350 degrees for 45 minutes

Not much of anything to report .. New Year's Eve was just a stay at home night, first year in many that I have not attended some sort of NYE party ..
New Year's Day I just kind of noshed on whatever I had that required no real work to prepare .. can you say cheese log and salami, crackers .. ??
I did have the required black eyed peas and I hope everyone else did as well .. anything that might improve luck for the New Year is worth doing ..
