I've had some that was good, and some, not so much. What cut & how?

I process myself in field during season then freeze in labeled freezer bags. Tonight is doe backstrap cut into cubes. I fry it initially in a little olive oil till the meat lets out water and cooks in it, once it reduces and gets dry'ish, I add salt and garlic stirring then add tomatoes and stir, once tomatoes make paste I add a little sliced jalapeño, cut heat and cover for 20 minutes. Then eat with bread.

Hey all! Finally up! Slept good during the storm we had here! Took prince out & checked my mail. Got my prize from the contest!

Wow! I was pretty surprised! I was only expecting some juice or something!
