I process myself in field during season then freeze in labeled freezer bags. Tonight is doe backstrap cut into cubes. I fry it initially in a little olive oil till the meat lets out water and cooks in it, once it reduces and gets dry'ish, I add salt and garlic stirring then add tomatoes and stir, once tomatoes make paste I add a little sliced jalapeño, cut heat and cover for 20 minutes. Then eat with bread.

This is how I do it (more with venison than anything else :))

Slow Cooker (Crockpot) Stroganoff

2 pounds stew beef or venison OR (skinless poultry or rabbit)

10 ounces mushrooms (cut in half)
1 medium onion, chopped
1 clove garlic, minced
1 cup beef broth (use chicken broth for poultry or rabbit)
2 tsp paprika (regular or smoked)
1 tsp salt
1 cup sour cream
2 tablespoons flour
1 tablespoon Dijon mustard
(1/2 cup dry white wine

Brown meat in large skillet and add to crockpot with mushrooms, onion and garlic. Add broth, paprika and salt. Cover in cook on low for 7 hours (or on High for 5 hours)

Mix sour cream, flour and mustard and add to meat mixture in the crockpot. Stir until blended. (Add wine after this step if using poultry or rabbit) Cover and cook on low for 15 minutes.

Serve over buttered egg noodles.

are you ok, sweetie?
I suppose I am, considering I'm chopped liver and all......
I've joined the chorus of "Kelli, quit beating up on yourself!". I just do it in a different way
It's a matter of perspective. You never have it as good as somebody else, but you never have it as bad either....

Yeah, Quatro, you had me up until the jalapenos. Not a fan. Sour cream, on the other hand, is right up there with BACON. In fact, venison tenderloin, wrapped in BACON is one of my favorites....

Anything wrapped in bacon (smoked oysters, anyone?) is a favorite.

Jalapenos, stuffed with cream cheese/onion/cheddar, wrapped with bacon and grilled is heaven!
