Wife asked for shrimp scampi the other day, so here's a rendition incorporating a little lobster tail to add depth to the sauteed mushroom, shallots, red bell peppers and sun dried smoked tomatoes, the generous portion of butter and olive oil first infused with a deep garlic and herb medley that was slow sweated on very low heat to caramelize,, then on to a quick fry and high heat white wine reduction before tossing in the GF pasta... garnished with a fresh squeeze of lemon juice...Mmmm
Yesterday my wife braised a beef brisket in the Dutch oven, I saved the drippings from the pan, and right now have four large onions sliced as thin as possible sitting in a skillet with a bunch of butter, garlic, splash of red wine vinegar and worchestershire sauce on low heat...
What am I cooking?

Both great meds. Okay then…the pain police is satisfiedMason is on Tramadol (pain) and Previcox (inflammation). Surgery was last Thursday and tomorrow is the last of the Tramadol and Wednesday is the last of the Previcox. Lab results won't be back until sometime later this week. They said if I havn't heard from them by Friday ... call. Dr Martin did say he thinks he got good margins. I'm so glad my local vet gave me a referral to a board certified vet surgeon. The procedure was more involved than a routine neuter. In fact, there was nothing wrong with Mason's prostate or testicles, but in order to get good margins with the tumor removal, Mason's entire scrotal sac had to be removed. Nothing left there to hold his testicles. Mason has been handling it really well. Better than I expected ... so far. Stitches are scheduled to come out 9 Aug. I have quite clear pics of the surgery site, but too graphic to post here. This pic was last Friday, a day after surgery and first day home.
