Mmmmm, black beans and rice, yummmm!!!

As a vegetarian I go through a lot of legumes and until recently used the low salt canned variety. I used to have a pressure cooker I used to cook the dry beans in and I killed it after many years of use. I recently treated myself to an Instant Pot and no more cans. And it also slow cooks which is a good thing because my crock pot is ancient and on its last leg…I still have the old fashioned green crockpot without an insert from when they first came out, lol.
I had to google this instant pot of which you speak, very interesting. I'm going to do some more research on this newfangled gadget, it looks to be a rather flexible and useful thing to have around.

If you are often wishing you could cook a meal fast and not in the microwave you'd love this thing. Supposedly you can also cook veggies in it but I only do that when I use it as a slow cooker to make stews.

Basically it's a pressure and slow cooker rolled into one although you can also steam, saute and cook rice and make yogurt. Price-wise it costs about the same as other pressure cookers.

Like I said my pressure cooker died after many years of repeated use and I figured it was money well spent to buy the Instant Pot since I think my crock pot wont be around much longer for the same reason. And I also been making my own Greek yogurt for years so when the maker dies (it too is pretty old) I plan to make my yogurt in the IP.

I bought the three quart model (same size as a crockpot) because it's just hubs and me.

Has any of you ever tried Panera's black bean soup? It's a vegetarian recipe and as a vegetarian myself I've made a copy cat recipe many times. It tastes spot on to the original. I suppose you could add some sort of meat in it.

Copy-cat Panera black bean soup

1 onion, chopped
2 small veg bouillon cubes
1/2-1 teaspoon cumin
2 cloves garlic, minced
1 1/2 cup boiling water
1/4 large red bell peppers
2 cans black beans, undrained

In a pot, combine the first six ingredients; simmer for 10 minutes. Add half a can of beans, salt and cumin; cook for 5 minutes. Puree soup. Add the rest of the beans to the soup. Combine the cornstarch with 1 1/2 tablespoons of water. Add enough water to make soup 5 cups.

I have mused to people how guys my Dad's age rock, how guys my age certainly rock and how guys my kids age do not rock. Weird. I actually find that girls my kids and even Jackie's Grandchildren's age rock way more than the boys. Weird.

My biscuits are cut and sitting in the fridge chilling, I haven't had a biscuit in like five years. The wine bottle wrapped with wax paper worked great for rolling them out nice and even. Got the beef stew on the stovetop reheating, can't hardly wait for dinner time now :lol: guess I'll hit the wine for a bit.
