I've never eaten a wild turkey myself. I've heard more say they're tougher than tender but I expect that depends on how they're cooked. It must be diet but a wild turkey has no white meat.
That makes perfect sense. Game will usually be tougher, because they're out there exercising and trying to stay alive, versus domestically raised ones who are pampered (so to speak.) The domestic ones are also bred to result in whatever is either more profitable or more desirable to consumers.
The game birds I've had were always dark meat and very strongly flavored. Sometimes unpleasantly so, for me.

    I’m happy you like it. If it doesn’t steep out to your satisfaction you can add a bit more coffee. The bourbon should lighten up.

    I'm thinking at least for now give it a week before changing anything because it is pretty good now. If need be prolly will just reverse the percentages for burbon & cappuccino. I think that just might nail it for me.

    I'm trying another simple recipe I found on ATF. Apparently it is considered a pretty highly rated mix, but it's a few years old. I'm normally not big on graham flavoring, but I'm liking this quite a bit. I let it steep about a week, but the notes say it's ready after 3 days.

    The cheesecake/Graham flavors don’t have much Graham in them. That’s why extra graham is added to a cheesecake base.

    It shouldn't have graham in the name if it doesn't have a lot of graham. It's confusing. But regardless, the recipe is pretty tasty.
