Joules are defined as watts*seconds. So they signify a set quantity of energy, 30J is 30 watts for 1 second. Or 60 watts for .5 seconds. But the board does not know ahead of time how long you will depress the button for, so the joule figure is inherently inaccurate without time control.
Instantaneous wattage is the appropriate display, and the wattage setting is like a wattage limit similar to a temperature limit.
