Good Day Fine REO Folk. Rosie Heeler was last of five going to new Vet last night. She's doing most excellent as "only dog" here at new place. (Real move won't be for a couple of weeks or more.) Last night was second night in a row she slept with me. We are both really digging it. Stopping by Vet Hosp today as one of the Vet Techs might be just the home for Jake Mastiff. She was off last night. Vet agreed that the easiest way for Jake to get over some of his fear issues would be to hang out at clinic. So glad she's open to big clinic mascot. Don't know if they still do this but Vets used to have on call large dogs for blood donors for emergencies. Jake has plenty to spare.

Stopped by the close by to new place Ace hardware store last night. I was so looking forward to shopping there. Bad news is store is closing end of Dec. Good news is everything in store is 30% off and discounts will even go lower. They had some wire drill bits going down to really, really tiny. Not cobalt but at least I'll know what size to order online. Picked up a smaller bird feeder that is appropriate for new tiny yard and porch, some white twinkle net lights for bushes, Christmas decor, and other odds and ends. As expected of Ace hardware stores around these parts I got individual attention from knowledgeable sales person for obscure parts.

I stumbled across a recipe for onion casserole. According to so many reviews you don't have to be an onion lover to like this. So fixing for tomorrow, at home, and Friday night pot luck at new place.

A neighbor right behind me, new place, has just started vaping, eGo/tank setup. She's still smoking but I gave her encouraging words. She wants to take me just down the road to a vape store. I think it's the parent store of newis B&M in my "old town".

Loving my new kitchen. It's similar layout to old house; same few steps from one side to other but not quite as deep. Where window is over sink, old house, is long high bar, open to LR. It's open plan and vaulted ceiling, like old, but on much smaller scale. Probably only a little less kitchen cabinet space but way more useable so will be like doubling cabinet space. I thought I was gonna miss our trash compactore but they pick up trash bags, on curb, a few feet from porch, M-W-F mornings and huge container/compactor is only a few yards from front proch, well conceiled by high wood fence; large stuff and doggie waste baggies.

Kaypers, ABSOULUTELY ADORE the afgan. And yes, it picks up all the woodsie colors at old and new place. Lawsy girl, it's huge enough to cover an extended family!!!! One of the, among many, really nice things is that it is remarkable light weight. And candle...... once again you have scented it just enough to not set off any of my sensitivities with woodsie notes. It's keeping me company here at new place. Thank you so very much. Cherish having a bit of my Kaypers here with me.

Keep those you love close in heart and mind. Find and give some happy.

You got a Kaypers afghan? Lucky dog! ;)

I am a lucky dog. But doggies won't be enjoying it. Curly Doodle agressively "digs" holes in all bedding. I think I'm going to keep dogs out of bedroom during day, so I can see my nice quilts and coverets, and afgan, then switch to more durable quilts at night. Surely I have something that can withstand Curly's digging. I gave DH the bedroom as his mancave. Study is bedroom and visible from main area of house so I want it to look nice during day.

The onion casserole is saved for future reference. Still wondering about the eggplant you mentioned earlier. :)

Really simple recipe. Takes a considerable amount of time to prep if making for 30-50 peeps like I did for last week's potluck. I stuffed several and made rest in large casserole dish. It's much better baked in shell (brings out the eggplant flavor) so for Friday night potluck I'm going to line the baking dish with the "rind" to enhance the flavor. I'll go fetch the recipe. I've found recipe, online, just recently, but most are not the exact Old Stone Inn recipe.

One of these days I will gather up all of my stuffed monkeys and take a pic. I must have......let's just say a lot! Some are not even out from their storage packs yet. I don't have as much room at the new place. But, I can really make it my monkey home if I take the time!

No hurry, Alice...I have plenty to cook for the holiday. I would like to have it next spring/summer when the eggplants are in the garden. :)

Old Stone Inn (Simpsonville Ky) Stuffed Eggplant

1 large eggplant
1/2 cup water
1/2 teaspoon salt
1/4 - 1/3 chopped onion (I usually put too much onion in. This time will follow recipe.)
1 tablespoon butter
1 tablespoon chopped parsley
1 tablespoon butter or margarine
1 1/2 cups water
1-10.5 oz cream of mushroom soup
1 teaspoon Worcestershire sauce
1 cup fine Ritz round cracker crumbs (about 24 crackers)

Slice off one side of eggplant. Remove pulp to within 1/2 inch of skin. Heat water and salt till boiling. Cook eggplant pulp in water till tender, about 10 minutes; drain thoroughly. (At first boiling water will rise and foam out of pan so watch closely first few minutes to remove from heat and lower heat just a bit to keep boil over down.) Cook onion in butter till tender but not brown; clear color good. Add eggplant pulp, parsley, soup, worcestershire and all of cracker crumbs except for two tablespoons. Fill eggplant shell with mixture. Place in a 10x6x1.5 inch baking dish. Dot with one tablespoon butter; sprinkle reserved crumbs over top. Carefully pour 1.5 cups water in bottom of dish. Bake in moderate overn (375F) for one hour or til heated through. Serves 4-6.

DH and I finish off one medium eggplant in one sitting. I usually do several at a time. They freeze well prebaked for later. Thaw a bit and bake as per directions.

Pulling any left over water out of baking dish and then garnish dish all around with curly parsley is a nice presentation. After eggplant is baked it's hard to transfer it to another dish but can be done.

A light brown gravy is nice over it if you are making gravy for anything.

Another, really simple, favorite Old Stone Inn dish. Scalloped Zuchini (or any summer squash)

Slice squash
1 layer squash
1 layer sliced hard boiled eggs
cover with cheese sauce and then grated cheese on top
cover with cracker crumbs
bake in oven 350F until brown

I usually do several layers, alternating eggs and squash
use your favorite cheese sauce and cheese

Most years I do the stuffed eggplant, also, with oysters instead of oyster dressing.
