Good morning, REOvil!

Alice- I know it's a day late, but here is a basic chicken piccatta recipe...it might be the exact one I have in my book. Only thing I do different is to deglaze the pan with white wine, then add a little chicken stock. Chicken Piccata Recipe : Giada De Laurentiis : Recipes : Food Network
Also, instead of butterflying, I always pound out my chicken breast until they are even in thickness. Good aggression relief.


I was with Scott last night...Ramen for dinner. :) Lisa's mahi mahi sure sounded good! I beer battered a mess of it not too long ago and Mom and Sis raved about how good it was for a week. Anything fried. :laugh:

Tonight i nuked my 99cent Banquet TV dinner for 3 minutes, 47 seconds instead of my usual 4 minutes flat. The Mystery Meat was much more tender, the fond sparkled, and the vegetables (ok instant mashed potato thingy) only needed a tad more seasoning (massive amounts of salt and pepper)

Yummm! 3 bites of pure heaven...

Good morning Reo-fanatics! You know, I remember when Swanson tv dinners first came out. They were homemade dishes and real mashed potatoes and huge portions. Who decided to change them to mystery meat, surprise gravy and synthetic tater like substances!

I remember tv dinner night being a real treat when I was a kid. Pulling out the little, wobbly metal tv trays and watching tv instead of the normal nightly inquisition....how was school, fine, what did you learn, nothing, do you even go to school?

Around 1963, Sunday after morning service. We would come home and change clothes. TV dinners would appear. Each of us had a metal tv tray stand. We gathered in the living room and watched wrestling on tv. It was a big thing in our house. The wrestling that is. We went to the local Amory a few times and saw some really good matches. I remember it well. WWF I think. Dusty Rhodes pops to mind.

The above four sentences are in reference to my first post about last Sunday's eppie...a sort of teaser about that eppie without actually describing in detail what transpired.

As to the post above it, as far as I know, this is still a freedom-of-speech country and I don't think anyone has the right to tell me what I should or shouldn't post according to their dictates. And PM's are not welcome, I deleted your last one that told me what to do and not do.

I wanted to share my cornbread recipie from last night, it was absolutely the best cornbread Ive ever eaten I think. Anyhow here goes, very simple...

(I doubled this recipie for a 10-inch cast iron skillet but left the jalapenos at 5tbsp)


1 cup cornmeal
2 teaspoons baking powder
1/4 teaspoon salt
2 large eggs
3 tablespoons nonfat sour cream
1 (8.75oz) can cream-style corn
1 (4.25oz) jar pickled, seeded, chopped jalapeno peppers, drained (5 tablespoons)
1 1/2 teaspoons vegetable oil

- Heat an 8-inch cast iron skillet in a 400* oven for 5 minutes
- Combine first 3 ingredients in a large bowl, making a well in the center of mixture. Set aside
- Combine eggs and next 4 ingredients, add mixture to dry ingredients, stirring until moistened.
- Pour into hot cast iron skillet, cook at 400* for 12-14 minutes or until golden
- Eat and enjoy.

This is Not a political post...just a reminder of how blessed we are to have a voice. But in order to be heard, we must use it.
Remember these?
We don't get them anymore because our voting here is all mail in balloting. I have suffered apathy long enough and I have been moved to take a bigger stand lately. Yes, I know my one little voice won't carry far, but many singular voices can make some noise. With upcoming battles on the vaping front, it's high time that we get in the spirit and make a scene.

Good morning Reoville. Just got back from grocery shopping and I'm making some cinnamon raisin bread. Last nights home made pizza was yum. Working on getting up the gumption to get out the mower and mow up a bunch of leaves. Hope all is well and special thoughts for Zippy going out over the ocean.

That sounds absolutely fabulous! If I wasn't gluten, grain, wheat free I would have made it for sure!

I miss cornbread, muffins, homemade bread, cake, the list goes on..........
