creepy stalking[/SIZE] the mailman today, if he ever gets here...

I'm creepy stalking my mail lady as well, virtually anyway. The PO website shows I have a Maple goodie waiting at home, but of course I'm stuck out of town for work and The Evil One's in Florida this week :( Thank ya jeebus for good neighbors. They're going to cleverly conceal it on my back porch until I can get home to play with it. This virtually guarantees I won't get a train home for at least 24 hours ;(



Master of Bassets...and not much else.

Val- did you make that crock pot chicken? I never read how it turned out.

It turned out just fine. It was juicy and I used the mirepoix in the bottom with the bones (which slid right out of the meat) to make stock. I was surprised how juicy it was since I added no additional water to it and there was so much juice left in the pot. It isn't as good as roasting, and you don't get that great skin, but if I needed to cook a chicken while out I would do it again as it is a safe way to do it.

I am making sort of a mexican curry tonight. It is really spicy, but not hot at all. I used carrots, onions, garlic, ginger, tomatoes, coconut milk, nopales and chicken thighs with a bunch of spices. Sounds funny, but it is really good. I think the 2 cuisines blend well, and DH seems to like it. It's healthy for him too ;)

Your Mexican curry sounds delicious!

I love crock pot meals during this time of year because I like to spend as much time as I can outside while the weather holds. Plus, I'm still cooking on a two burner and a toaster oven.

Well, some of us do. I was a falconer for about ten years, and the rules are very important in that sport. I dislike those outdoorsmen that seem to think the rules don't apply.

Wish I had a suggestion about your kennel problem. Best I can say is call fish and game.

Scottish Terriers! I have 3 black (2 male, 1 female) and 2 Wheaton (1 male 1 female) all from the same bloodline :)...my groomer has several from our line also. The Wheaton male is champion bloodline....anyways.

Getting ready to do some really fast organic, skinless chicken breast, already thawed and room temp, sorta, kinda as of a few minutes ago. DH just came in office to ask when dinner ready. He, maybe jokingly, suggested crushed low salt fritos coated and fried. I was wanting to do a lime, capers sauce but we'll see what you gal n guys think. Have some COSTCO, Val, precooked but not frozen Kale n Collards w garlic, onions, and bacon.

We drove into, as far as we could go, the apartment complex, (it's gated) I'm so hoping to get into. DH liked it. Beautiful landscaping and way far from most busyness and only a few miles from one of the Native habitats out here. Close by houses are upper scale. Gonna make appointment, hopefully tomorrow, to go talk to management. End of main road ends at Habitat a mile or so away. Really big place but online info indicate only three X 1 bedrooms available right now.ci

His recently new experience with apartment living, at out of town job, instead of weekly hotel, has certainly changed his opinion about apartment living. I'm so ready to eliminate all the stress and struggle to maintain our money pit house. He's finally seeing my side.

Talked with my health insurance carrier today about resolutions not being able to continue to pay the $1137 monthly payments; totally incredible 100% pay, no limits, no co-pay. Councilors will call me tomorrow. If I drop it I'll be uninsured for two months until I can start Obomacare. DH said he'd store me in big freezer until January so I wouldn't need health care. I told him if my hip breaks he can just park me in a recliner till January and feed me pain killers. Anything else, he can lidocane me and home operate say, like a broken bone. I've never broken a bone but hip has me worried. It's the only place I have osteoporosis. If I have a breast cancer it can hold off till January. Probably not but last mammogram required biopsy. I've been getting mammograms since my early 30's due to funky looking breast tissue.

Gotta go run and fix up some CHICKEN breast, Dennis. Anybody reading this and can do a really fast recipe would appreciate.

If my connection stays on long enough Alice... Preheat oven to 350 with your pan in it. Take out pan and sear breasts with whatever rub you want, a few minutes then turn and put in oven until chicken reads 160. Usually about 20 minutes but depends on what size they are. They will be moist that way as breasts dry out so easy. You can make the pan sauce while the chicken is resting.

ETA: sorry, I couldn't get online with the computer but the iPad could so I can elaborate now:

You want to rub some oil on the chicken. If it has skin, start skin side down then brown, turn it over and put the whole thing in the oven until juices run clear. You don't need to brown both sides. If you take it out at 160, cover and temp should rise to 165. This works great for pork chops also, they stay tender and juicy even with the nasty modern way of raising piggies.

Val to the rescue. Have the tiny cubed summer squash and very tiny chopped onions going in microwave. (Loving my 8" Global Cooks knife. DH came in to divide up some way overcooked, nearly cremated pizza from this morning, for Bubs. He started chopping, on block with my new knife. Just a few words to stop and pulled out Chicago cleaver, newly sharpened. No arguments. YEA!!!!) As many onions. Did butter, white pepper, pinch of sea salt, all spice, a splash of agave, and some coconut milk.

Will do as instructed for chicken but going to coat in very finely smushed low salt Fritoes, as DH is looking forward to that and a hint of lemon. He really wants fried but these breast are not suitable for frying.

Will let you know how they turn out.

BTW.... last night I found my paternal grandmother's iron skillets, in pile of stuff, outside I had the yard guys save for me. They've been outside, as garden decor, on fences, for years. Going to recondition them, season, etc. I wish I hadn't given away all the neat cornbread irons, different shapes.
