Good morning, REOvil!

Alice- I know it's a day late, but here is a basic chicken piccatta recipe...it might be the exact one I have in my book. Only thing I do different is to deglaze the pan with white wine, then add a little chicken stock. Chicken Piccata Recipe : Giada De Laurentiis : Recipes : Food Network
Also, instead of butterflying, I always pound out my chicken breast until they are even in thickness. Good aggression relief.


I was with Scott last night...Ramen for dinner. :) Lisa's mahi mahi sure sounded good! I beer battered a mess of it not too long ago and Mom and Sis raved about how good it was for a week. Anything fried. :laugh:

The Evil One makes a mean smashed chicken. If you season the breasts prior to pounding, it really drives the flavor home :)


Master of Bassets...and not much else.

Tonight i nuked my 99cent Banquet TV dinner for 3 minutes, 47 seconds instead of my usual 4 minutes flat. The Mystery Meat was much more tender, the fond sparkled, and the vegetables (ok instant mashed potato thingy) only needed a tad more seasoning (massive amounts of salt and pepper)

My kind of cooking, now that i can.

ha ha ha your eating like me my dinner is a bag of ramen :)

Ramen is the best :)

That sounds absolutely fabulous! If I wasn't gluten, grain, wheat free I would have made it for sure!

I miss cornbread, muffins, homemade bread, cake, the list goes on..........

It does sound really good...I just wish I liked cornbread. Never acquired a taste for it. :(

ETA: Clearly it is just now dawning on him that he is riding alone. :lol: I hated that moment....you know, the one when I didn't realize there wasn't a horse under me until I hit the ground. Amazing how fast it happens...nothing slo-mo about it. :facepalm:

Kay, I am sorry if I offended you by asking you to not type spoilers after you are able to watch Walking Dead ahead of Pacific time. I was asking, not telling. Go ahead and type here whatever you please as of course you have the right to.

I love the series and the books and look forward to Sunday to watch the new ones, watch Talking Dead, do the story sync and all of the other things about it. My whole family does, even those on the East coast, so it makes it a lot of fun to share. I will just not log in here on Sundays after 6 pm, then I will not have to worry about you typing whatever pleases you. I will not make this a problem, I hope you don't choose to do so either. Nothing was personal about anything I said, I do hope you choose not to take it personally as I would love to discuss why you feel Rick is not playing well with others. Apparently you felt strongly enough about it to repeat it 5 times, and to let us all know before we were able to see it ourselves. Obviously, I think Rick saved Carol's life and was completely justified in not trusting Carol around his children after she told Carl to lie to him. It is just an opinion, and I would love to hear yours. Perhaps I am missing something?


Our wifi is officially down. I am at the condo so I can at least get online long enough to get some stuff I needed to do online. I have no ETA on when I will have it back up, I can do the troubleshooting but DH runs the house computer stuff. Here at the condo everything is silky smooth since I run that :laugh:

Oh that would drive me bat .... crazy having my wifi down, especially during production. Even a couple of hours can ruin an entire day for me if I let it. I sure hope yours gets sorted out soon.

I don't like plain cornbread much either Lisa, but cornbread with extra stuff thrown in is fabulous. My favorite is broccoli cornbread with broccoli and cottage cheese added to the batter. It's quite tasty but the jalapeno and creamed corned one has caught my interest too. :)

To be honest...it could simply be that I don't live in an area that typically enjoys cornbread, so it's entirely possible that I just haven't had any "good" cornbread. :laugh:

Good Day Fine REO Folk. Scott, I'm doing fine. Thanks for asking. I was probably in hot tub when you texted, around 0300. I was in a flurry, after, to get to bed before dawn so didn't see or hear beep from phone. There are so many various beeps around here all the time. Had a mystery one last night I had trouble locating. With open plan and vaulted ceilings it's hard to locate with sound bouncing all over. Finally found it. It was carbon monoxide detector that needed new battery. I couldn't get it open to replace and it's 14 years old so decided to put it in hazmat box. But I had to put it outside as it was driving us crazy. Can still hear it so going to do something to muffle sound till battery gives out fully.

Chicken turned out great. Damn things were huge; 1.5 lbs each, no bone or skin. Had to cook them longer and then did a few minutes on broil to toast the smushed Frito coating. DH usually saves at least one big bite of any meat for favored child Jake Mastiff and DH never eats a pound of meat at a sitting. He liked it so much not only did he almost gush but didn't save any for Jake. (DH and Jake sneak into office so others won't see but they know if they are inside.)

Deglazed with dry white wine. So little of anything left in pan I had to make up some Better Than Bullion stock with cornstarch. Very nice, delicate sauce. Dash of lemon and white pepper and capers. Only capers I had were large and "pickled". Need to get some smaller ones packed in water. Had some in cabinet but I think Sissy and I threw them out culling.

Val, our Sprouts has two kinds of GF cornbread mixes. And our Albertson's even carries one of those. They are quite good. For creamed corn I cut kernels off of fresh corn, boil in a bit of water, not too long, then thicken with water/cornstarch and simmer for a while seasoned with any butter, real or fake, a dash of salt and some pepper. We rarely eat corn, except for occasional chips, but it is nice in cornbread. Have to be a little careful using in GF cornbread or it will be too heavy. With the GF cornbread it does better if you make it in muffin tins instead of whole pan. I was so impressed with the results of dredging in quinia for slow cooked meat, and gravy, a few weeks ago, I'm anxious to use it more; delicate nutty flavor.

Doing my most incredible barely seared calf liver and caramelized onions tonight. I don't do any dredging on them and do them in same pan onions caramelized in with a bit of olive oil added if needed. DH thought the chopped kale/collards were a bit tough. I happen to have some salt pork so going to do a several hour cookdown in a bit, for tonight. Microwaved whole yam. We prefer them microwaved. Sorry about that potato purists. :p And, although we like the skins, they are special treat for Bubs. Saving the leftover squash/onions for, baked with egg and cheese, casserole for tomorrow night.

Kay, I'm still not cooking for DH. I'm just sharing mine with him.:D

I don't know if we ever started a cooking/recipe thread here. Let's do that. BTW.. thanks all who share.

TV dinners. When they first came out, in the aluminum trays, Mom would set the oven timer so they would be ready after church before we took off for our monthly visit to my Dad's brother at the VA hospital in Lexington. While he visited my uncle Mom would take us to various parks for bird watching. Otherwise we didn't eat them so they were a special treat. Do they still make any in aluminum trays? A few times a year I'll get one for nostalgia. I do it when DH isn't here as he's totally grossed out by them. I even hide them in freezer so he won't razz me. DH is major food snob.

Beaming out special good will and healing to Norman and Zippo. Although I'm letting my very expensive health insurance go for two months until picking up AC in January I'm keeping the major medical insurance for dogs. It comes to about $150 a month but one trauma visit can cost as much as a whole year of insurance for all of them. It doesn't cover well care checkups, shots, or spaying/neutering, or teeth cleaning, etc. That increases the cost dramatically.

Find and give some happy.

Oh yeah, carbon monoxide detector started shrill, very loud, continuous "scream". I put it in heavy ziplock, and submerged it in a bucket of water, weighted down with bricks. While it was going off neighbor's dogs didn't do any barking. Now that it's virtually silent they've started barking again.

I've had to use my phone as hotspot several times. It's a nice feature and with a booster for cell reception it's almost as fast as our old copper line DSL but it is limited to 4 Gigs so we have to be very conservative in data usage. I don't keep the feature all the time and only pick it up when DSL out for more than a couple of hours. Newer tablets with cell reception are great for casual work but my data, for Tablet is limited to 2 Gigs with Sprint. Luckily Samsung Note 2 and 3 have large enough screens, and with unlimited data, are great for many uses. Wouldn't work out well for Lisa's work though.

I have two antennas that pick up free wi-fi from pretty long range but we are too far out to pick up any free signals, from in town. Hope you get it back soon Val. Hopefully we'll be able to pick up free signals when I get DH moved to apartment, if needed. I think there are a few places within a couple miles, with free wi-fi. Apartment includes complimentary wifi and cable ready so hoping that will be better than what we have here. DH is doing a lot of research for book and participates in several online sites and he has little patience with our slow connection. It constantly drops, on and off, so lots of wait at times especially in wet weather. My solution is to get up and do chores when it's being crappy.
