What's for Dinner?

chicken in foil is super simple. I've used both bone in and boneless, but prefer boneless skinless chicken. Last night I used 4 chicken thighs and half a chicken breast. Compleatly thawed chicken is best for this, otherwise it's not as tender and juicy.

Take one good size piece of foil (enough to generously wrap your chicken parts) drizzle the middle lightly with oil to prevent sticking. Place your chicken in the middle of the foil, season (I use a LOT of garlic and a few other assorted spices) then fold the foil. You want to fold it so the chicken is well sealed into the foil. Sometimes this takes two pieces of foil for me. Cook at 350 (ish) degrees until the chicken is done. I'm not sure how long "done" is, I have a nose for food that's reached it's done point and rarely need to check the time. When your chicken is done GENTLY unwrap the foil (Steam hurts) and voila. Super easy peasy and tender. WE've made this in campfires too- great camping food. Can be done with just about any meat.

Honestly, I haven't read enough of your posts to know if you are male or female, but you referred to your "wife and her girlfriend" and this is "The Woman's Room." So, either you are a guy posting in the women's group or a married lesbian. Sorry, I didn't mean any disrespect. :(

Did your doc give you a guideline of foods to eat for those conditions? I know oatmeal and cheerios/etc are supposed to help with cholesterol. Of course you have to cut sugars to keep your sugar down, but raw (not salted or sweetened) almonds will also help keep your blood sugar stabilized if you snack on them throughout the day.

I'm dreading the day my doc says to me, no more breaded foods/starches! 8-o I do LOVE veggies though...but not nearly as much as the starches LOL!

Tonite's dinner was just me, so it was pizza from the little mom and pop place here in my tiny little village. White Garlic with extra mushrooms, it is DELISH! Ordered a 14 inch and ate 3/4 of it! Good thing I don't do that often.

All this past week, we had home made tacos. (burritos, as I buy the big 12" Azteca flour shells) They are my son's favorite, so I bought a TON of stuff to make them. I didn't know it would last all week, but it did! We had tacos from Monday through Thursday!

When I first got diabetes..in the stone age..lol.. my Dr. said to me "Eat fish, soup and drink water..lose weight!" Great advice..concidering my triclycerides were over 1,000! I could have died! But I found a decent Dr. who gave me the whole diabetes training..which I threw out the door. Drink water and eat cardboard..weigh every bean..Blah blah. I eat what I want, within reason. I limit my sweets to a now and again treat..a bite not a whole cake! I eat fried foods once in a while and make sure I cook with a good oil like olive or vegatable. I drain all fried things well on a cake cooling rack set on a plate. Yes I do bread some times! Grilling is great though..try a panini maker that have varible settings or a George Foreman.
Try grilling your veggies with lots of seasoning. If you just can't do it, get some of the V8 fruit juice that hides veggies. Just make sure you get lots of fiber on the side! Fiber helps you lose weight. It absorbss fats and moves them on out!

There is only one way to lose weight..close your mouth and move your booty..no big trick. I went from 190 to 150 by walking and using a luncheon size plate for dinner. Snack on things that are sugar and mostly fat free..vape to fill in the gaps! Water helps to fill you up and clean you out. Drink a glass before dinner. But until you get your life in order..try ALLI from the Pharmacy. You will have to go to the bathroom if you get too much oil or fat in your diet..sure fire way to learn!

Good luck. There are several diabetics in the Wrecked and Bonkers forum..they helped me when I had to start using insulin. ( no biggie by the way..But I am scared of needles).

Start a diet thread in here..lets see what every body else does.

He told me to cut my carbs at least in half...grrrrrrrrrrrrrr! I don't eat too many sugary things but of course the carbs turn to sugar! I actually need to lose at least 40lbs but to get to what I should weigh it's more like 70. I am going to start walking again. I love V8 juice, the original anyway but I need to see what the carb and sugar contents are. I think it's high in sodium but I'm not too concerned with that at the moment.

I might try the chicken in foil thing tonight. I love chicken just need to figure out what kind of spices I want on it!

Sattec is a guy with a special interest/talent in cooking as do a couple of our male friends. He has asked and was given permission to post in this thread.

It's hard on a forum to see who is who or when someone is kidding.

Hopefully you all have settled it by now! You are both wonderful members and friends.

I'm going to buy KFC tonight danggit! The oh so yummy - oh so bad for you dinner splurge! I will swim in the oil and mashed potatoes while stuffing myself with calorie laden biscuits. I will be too stuffed to think straight and I'll be smiling (and won't have to clean up much afterward). Tomorrow it's back to homemade dinners.

Thank you very much for rubbing that in!!!:mad:;) Actually I don't know about where you are at but the Colonel Bucket here used to REALLY good when I was a kid. Now it's greasier. Don't know why that is...but yeah...I'd eat it too if I could!!!:D

Green beans with raspberry vingarette..or with toasted sliced almond slices. You can add green beans to a pot with small potatos cooked in chicken broth (swanson's is good..and fat free!) Very good!
Green bean cassarole, green beans with kidney beans. the possibilies are endless!
Oh I forgot..we are going to Outback tomorrow for our Aniversary/Birthday!

spagetti and garlic bread for dins tonight. A small chopped salad (Since Elder daughter and I are trying to fit veg into every meal) with honey pecans on the side. Planning for the rest of this month since the hubs is VERY steak and potatos, while I prefer steak about once a month or so.
