chicken in foil is super simple. I've used both bone in and boneless, but prefer boneless skinless chicken. Last night I used 4 chicken thighs and half a chicken breast. Compleatly thawed chicken is best for this, otherwise it's not as tender and juicy.
Take one good size piece of foil (enough to generously wrap your chicken parts) drizzle the middle lightly with oil to prevent sticking. Place your chicken in the middle of the foil, season (I use a LOT of garlic and a few other assorted spices) then fold the foil. You want to fold it so the chicken is well sealed into the foil. Sometimes this takes two pieces of foil for me. Cook at 350 (ish) degrees until the chicken is done. I'm not sure how long "done" is, I have a nose for food that's reached it's done point and rarely need to check the time. When your chicken is done GENTLY unwrap the foil (Steam hurts) and voila. Super easy peasy and tender. WE've made this in campfires too- great camping food. Can be done with just about any meat.
