What's for Dinner?

Last night we had my standby comfort dinner -- Creamed asparagus on toast. Simple and I really love it. I've made it with fresh asparagus on occasion, but the canned is what makes it my comfort food. The problem is finding good quality canned asparagus. Most have lots of very woody pieces in them. Green Giant is good as is Del Monte, but both are very hard to fine in the stores around here. The Pick and Save chain has taken over the area. Bad.

Tonight is back to the tacos to finish off the meat and beans. ;-)

Salad...that's about all I eat anymore. W/ canned chicken, yellow bell pepper, celery, sunflower seeds, and ground pepper when I remember it! Pretty tasty as salads go but I'm really missing potatos, pasta, bread, and anything else good. Will probably have some pork loin chops tomorrow night! And yes...with a salad.:(

Well I made a bad dinner! yeah I know..what else is new!
I tried to make chicken fahita's from leftover chicken..oh yuck!
Does anyone have a secret for making it?

No secret... except for the chicken! I always buy the pre-cooked chicken slices from Trader Joes. Don't know how they cook it.. but it just has the best flavor... and can be used in so many ways: fajita's, stir-fry, chicken salad etc. I think it's about $4.49 for 16 oz. but since it's pre-cooked and won't "shrink" plus just the convenience of having it pre-cooked and ready to go... I love it! :D

My Chicken was great when I roasted it..but leftover it turned to Rubber! Rubber chicken..lol! I will look for your brand..
Tonight we had spanish dinners. We went to Tampa to reup my Military I.D. and while we were there hit the commisary and this great little grocery store outside the gates. They have a deli and make full dinners for take out. I got Ropa Vieja (old clothes) It's a dish made from shredded beef in a whole tomato based sauce on yellow rice with collard greens. Mike got spanish chicken..spicy.. with white rice and red beans.

We have enough left over for dinner tomorrow!

I forgot to tell you that the chicken is in the frozen section at Trader Joes :) The Ropa Veija sounds really good.. I love shredded beef! I've never had collard greens, but I used to feed them to my Iguana.

I made stuffed green peppers again on Wednesday.. with enough to have them again on tonight. I forgot how much I love those.. and so does hubby :thumbs:

OOPs..I thought Trader Joe's was a brand! I looked at my supermarket..nope. We don't have those around here.

Oh no.. my oops! I forget that not everyone has Trader Joe's! 8-o We have 2 of them, both about 15 min. away. Sure wish I could send you & McArthurBug one! Trader Joe's is wonderful... and I buy most of the groceries there.
