What's for Dinner?

Curiouser and curiouser casserole LOL.

When my kids were small I got this cookbook... all natural recipes for kids (don't remember the title), things are named after fairy tales, etc.

The recipe calls for vegetarian chili, etc.

Because it became a favorite of my kids, I have tweaked it and now make it whenever I have leftover spaghetti sauce, and leftover chili.

pretty much all it is is... a jar of spaghetti sauce, two cans of chili, green and red peppers, and onions sauteed ( I used 1/2 a jar of salsa instead). Frozen or canned corn, and cooked pasta (macaroni, whatever). Mix it all together, add some shredded cheese and serve over or with tortilla chips (my kids like to dip).

It does not sound too appetizing, but it is very good - kind of a twist on hamburger helper LOL.

Not this time..all I did was put salt and peper on them and bake slowly. I added the sauce at the end and turned the broil on for a few minutes. I just wanted an easy meal tonight.

Aww... the "What's for Dinner" thread! I've sure missed it... AND my good dinners I was making a while back! :( Lately we've been having anything simple (lots of soup and sandwiches) and usually with a dog hair garnish! 8-o My grooming shop is 'officially' open until 6 PM.. but I used to try and book my last dog to leave by 4:30. Lately I've been so busy I can't seem to ever get out of there before 6... and my tummy is very sad! :p

MK your ribs sound yummy! I was so sad last week when I drove out to the shelter where I groom on Mondays. There was this little red building that was a restaurant called "Leo's Ribs" and a huge big black BBQ thing outside that was always 'smoking away' full of ribs. I'd see 'Leo' out there rain or shine (and in Oregon it's mostly rain :() at the BBQ. Every week I told myself the next week I would stop and get some 'Leo's Ribs' to take home for dinner (my hubby loves ribs) and never did. Now I've lost my chance... Leo's Ribs is gone. :shock:

Mixxy, Don't you just hate that! I don't like losing older places. I like to pass them and remember that I once sat here with my sister and had ice cream.or held hands under the table with an old boyfriend. Does the world really need another Walgreens or Starbucks?

Tonight we had fried fresh catfish , cole slaw, rice and navy beans and cornbread. I bought one big piece of catfish thinking I would just cut it in half..wrong, that one fillet was cut into 6 pieces! It was so big!

Mike has already fallen over in a dead faint from eatting too much.

hollow it out BUT I leave more potato in the skin than you might expect,
deep fry the "skins"...it's deep frying that extra thick layer of potato on the skin that makes 'em good

I stuff mine with shedded polish sausage or bbq beef or spagetti (yummy)....maybe add back some potato, cover with cheese, slide under the broiler...delish ...maybe dribble some ranch dressing over the top ...uh, use the giant potatos....more fun! My wife dresses her own skins...she loads up on all that stuff I hate....

Homemade Nachos
The salsa for topping:
4 tomato(e)s seeded and chopped 1/2 large onion chopped small 1/4 c cilantro salt to taste, mix and let set while you prepare meat.
Meat:
1 lb ground sirloin-For you Mary Kay-No turkey
1/2 large onion 2 cloves garlic-chopped fine 1 tbsp olive oil 1 jalepeno
1 tsp salt 1 1/2 tsp dark chili powder 1 1/2 tsp cumin 1/2 to 1 tsp cayenne pepper
mix all together and brown till cooked through. Once cooked through add a can of black beans (not rinsed) and cook for 5 minutes.

Cheese topping is our favorite: Velveeta (mexican style) melted with Rotel.

I also chop some scallions and black olives with extra cilantro to toss on top. Sour cream if you like. I use the colored tostado chips for fun.

Wow, it's been so long since I posted here! Isn't this still the "Women's Room?" Do I see guys posting or is Sattec a lesbian? LOL! ;)

I've been having so much fun cooking lately. I've been learning to make things without mixes - semi-scratch. I made huge batch of spaghetti sauce (canned tomatos, so only semi-homemade) and that was good for Chicken Parmesan and the frozen leftover sauce was used later for lasagna. So much more flavor than the jar sauce!

Then we finally broke out the new deep fryer (been procrastinating, because I thought it'd be a lot more of a pain than it actually was.) Our first home-fry meal was breaded Buffalo and BBQ wings (I admit I got the precut, frozen wing sections from Sam's Club - they were too cheap to pass up.) These were some of the BEST wings we've ever had! We used to order from a delivery place, but since we moved 3 hours away, we had to create our own. I didn't realize wing sauce was so darned easy! We made celery/carrot sticks and the best fries - BACON FRIES! Just deep fried frozen french fries and then sprinkled them with Bacon Salt. OMG! My 16 year old son finally tried them this week and he's now in love, lol!

Last night my son and I made jambalaya. Normally, I buy Zataran's Jambalaya, but I'm trying to learn to make my own stuff. We chopped up a ton of celery, green pepper, onion, green onion, chicken (has leftovers frozen from when I poached some for Chicken Fettuccini Alfredo) and smoked sausage. We had 3 different Cajun and Creole seasonings and put them all in. Then added a sprinkle of cayenne pepper - holy cow!! We were all sweating when we ate it, but it was quite tasty. Next time, less celery, no cayenne and about 1/2 the seasonings. I made 3 more cups of rice today and mixed it in and it was STILL hot! Well, trial and error is how you get your own "family recipies." LOL

Tonight is a new dish - ham spaghetti. It's a cheese, cream soup and sour cream based sauce with ham and veggies over spaghetti. I'll let you know how it turns out!
