I've got a day off and am going to clean out my refrigerator from holiday leftovers that need to be dog food or trashed if the dogs turn their noses up.

Had some beef cocktail sausages left over, so I'll make some lil pigs in blankets. Also found a fantastic honey mustard dipping sauce recipe. Made some for DD, and she wanted to just each it out of the jar, lol. Have some dry roasted peanuts left over, so I might have to make some peanut brittle - found a microwave recipe that takes only about 10 min. to make it - no candy thermometers, no hard ball stage, just nuke for 6 min and pour on a greased cookie sheet. I like to make it myself instead of buying it so I can get LOTS of peanuts in it.:)

Its a cold day here - 59, but it feels like 49 to me .... brrrr.

Seriously, Jerry, you should try it - super! Here's the recipe:

Microwave Oven Peanut Brittle
1 1/2 cups dry roasted peanuts
1 cup white sugar
1/2 cup light corn syrup
1 pinch salt (optional)

1 tablespoon butter
1 teaspoon vanilla extract
1 teaspoon baking soda

1. Grease a baking sheet, and set aside. In a glass bowl, combine peanuts, sugar, corn syrup, and salt. Cook in microwave for 6 to 7 minutes on High (700 W); mixture should be bubbly and peanuts browned. Stir in butter and vanilla; cook 2 to 3 minutes longer.

2. Quickly stir in baking soda, just until mixture is foamy. Pour immediately onto greased baking sheet. Let cool 15 minutes, or until set. Break into pieces, and store in an airtight container.


NOTE: You have to be super fast after taking the mixture out of the oven, b/c as it starts cooling, it starts hardening. The way I do it is have everything on the last steps pre-measured and ready to toss in. Then I spread it out as quickly as I can.

Hi Poeia and Jan. Sorry to post and run, but I had to call my son. His DW flew from OR to NY to visit her daughters. Without her home, my DS and I had an hour's chat.

They're trying to start a country lifestyle and dont know where to begin. He wanted to learn how to make cheese, butter and how to dehydrate food and store without processing, thus the long instructional conversation. Without my being up there to teach them, I have a lot of links to send him - might even ship my dehydrator to them to see if it something they will enjoy doing. LOL, it was a fun chat.
