Of course, need to say this is Victor's recipe so it is helpful to watch his video and if you buy the starter ingredients through his link, he is compensated a bit. He also has a vid if you can't use dairy milk.
Easiest is to use an insta pot with yogurt function. If you have that here are the directions and ingredients:
You will need:
insta pot with yogurt function or some yogurt maker
1 quart of half and half milk (4 cups), ultra pasteurized (I use Walmart brand)
1 packet of LR Superfood Starter Culture L.Reuteri Probiotic Cultured Dairy starter (get on Amazon, only need it once, you use some of the one you make for next batch)
2 Tbsp Inulin Powder
Directions:
-Sterilize insta pot and 2 pint glass jars/lids
-Place small amount of water in the insta pot with the trivet on bottom (water should not rise above the trivet)
-Pour a small amount of the half n half into a bowl, add the Inulin and whisk till combined with no lumps.
-Add one packet of the L-Reuteri starter with the rest of the milk and whisk to combine
-Place the mixture into the 3 glass jars with loosely fitting lids.
-Place the 3 jars on the trivet, close lid with steam vent in closed position
-Press yogurt button and set time for 36 hours
When the 36 hours are up, carefully remove the jars as lids are loose. Stir each gently and refrigerate for at least 6 hours. Stir again and it is done.
Notes: Timing is important unless you want to get up in the middle of the night, lol I start mine at either 7am or 7 pm so it is finished at a reasonable hour. The directions on the packets will be different re time, etc. I would use this recipe for the best benefits.
Save 2-3 Tbsp of your yogurt to use instead of the starter for the next batch or you can use the starter packets but they are expensive so I save some and start a new batch.
It will be thick and tart, use whatever sweetener, flavors, cereal, granola, pudding mix, smoothie. It is yummy and healthy stuff. I saw a major difference in gut issues and inflammation by the 2nd week.
If you want to watch his video or use his Amazon links: NOTE: He tells you 3 ways to make it, one is thinner for smoothies, I use the one for thick greek yogurt which I have posted above.
