Evening Army!
Checking in with a follow up on the sourdough bread. The final dough was finished around 1 PM and set to rise at room temperature - since Thailand is so warm it is not necessary to warm the oven and put them on top. At around 4 pm, the San Fran dough was taking off well, but the Flax Seed still wasn't rising much at all, even though I started with that one.
In comes Mama Chak. We need to go to the market! Ok, just hope we get back in time for the San Fran, bc it's gonna be ready first in about another hour, or less. Back from the market at 6 - the Flax Seed is now twice the size as it was when we left and the SF is nearly 3 time as big and may have risen a bit too far. Biting my nails, I roll the dough out of the bowls and knead them and form the loaves. Yeasty Beasties don't move well inside dough, so kneading again helps get them around to where the food is. It's now 6:30 pm and loaves are formed and rising.
As I type, it is 8:24 PM. San Fran is definitely going into the oven first. Probably around 9. Turning on the oven to 375˚ F with a bowl of water in under the racks. This works out well, bc by the time SF is done baking, Flax should be ready. The second rising should take about half the time as the first. I'll be baking them for about 40 - 45 minutes.
