Good Evening Army!

Finally got Mama Chak in the bedroom watching TV - this is my time now. I got 3 tanks to clean and some yeasty beasties to feed. Building up the starter so I can make a few loaves come Wed. Two San Francisco Sour Dough and two Sourdough with Flax seed. I need 450 gm of starter between the two breads and I started with 150 gm, which has double since I fed it before noon. I'll feed it again before I go to bed, it'll double again to 600 gm and I'll have more than enough to start mixing the dough tomorrow morning. Depending on how long it takes to rise, I might be ready to bake in the afternoon or evening. Some SD bread takes up to 12-15 ours to rise!

Chak, how long do you baby these yeasties before using them to bake? (I have no patience for food, if it takes much longer than 45 minutes I'm over it) lol

a good sour dough starter is handed down thru generations..... its a matter of keeping a certain strain of yeast alive and active for years. :)

This particular strain is about 4 months old. I took out half of what I had in storage (150gm) last night and let it sit till it reached room temp. Then around 11 this morning I fed it 90 gm of water and a 50/50 mix of whole wheat and all purpose flour at the same weight 150 gm. Put it in a big jar and it has doubled in size already and is still rising. If I got the math right it now weighs 390 gm. I'll be doubling that when I feed it tonight and by morning it'll be ready to mix the final dough and kneading.

After kneading, I let it rise till double it's size, punch it down, knead again, form the loaves and let them rise again. If it rises fast, I'll be baking in the afternoon - slow and it may not be till Wed. morning. Hahaha. :blink:

So, yeah, it takes some time to work with sourdough. But it's worth it in the end. Yum.

Whew, that was some thirsty work!

My yeasty beasties are weighing in more than what they are supposed to. The original feeding schedule called for 300 gm starter, 300 gm flour, 180 gm water and 1 gm salt. Trying to save time, I didn't cut out the 180 gm of starter - I just added 300 gm flour and 180 gm water and 1 gm salt. So that's 480 gm + 300 gm + 181 gm = 961gm. When I weighed it it came out 1040 gm - 80 gm too much! Hmmm ... We'll see how it goes.
