Turkey breast in the crockpot is the way to go in that situation, comes out really juicy and tender. That and your green beans could be frozen for later meals, the potato salad ... well, you'd just have to suck it up and eat that pretty quick!Thank you! But I'll be fine. Yep..Here in the south, if someone doesn't make a sweet potatoe pie at Thanksgiving it's considered insulting tradition!Ah yes, Chooch, the "other stuff" -- whether it be the pies or the traditional family jello salad --- nice for treats with coffee or just for snacks.
Ah Sirius -- you could reconsider. Many groceries have all the goodies prepared and just have to be reheated. Or, you can even get just a drumstick or 1/2 a turkey breast and cook it just for you. Modern stores now have things to offer for the single cook and the "I can't cook" or ones who just want convenience. Really in a pinch -- there is always turkey TV dinners.
As for potato salad --- I prefer my homemade, and make it just for me in small batches -- but it will be taters of the yam and russet variety for tomorrow.

That is exactly what we did! I cooked three turkeys! One for the sit down dinners and two for leftovers! My grown sons wouldn't know what to do if I didn't send them and their families home with tons of leftovers! And of course Mr. Chili and I want leftovers too!As yes, the leftovers. The best part! Turkey sandwiches with a bit of stuffing and home made cranberry sauce can't be beat. With the microwave invention -- load up that plate and nuke it for a replay meal!
Even when going to big friendly gatherings on Turkey Day, we still cook our own over the weekend to ensure we have plenty of this fare.
