    I've got the turkey in oven, eclair cake in the fridge and just need to make gravy and a mountain of mashed potatoes in awhile. I'm thinking I should have Doug stick the potatoes on the lathe. He could turn the skins off in no time. :laugh:

    It's an easy one! (I love easy in the kitchen! lol)

    Two pie crusts (I used Marie Calendars frozen pie crust - 2 in a package. Best pie crust ever!) If you're talented, you can make your own. That is not one of my talents.

    Roll the pie crusts out on wax paper to make them thinner. On one, put whatever you like. I wanted to try a couple of things so I did it half one kind and the other half different.
    This is what I used:
    Half had Apricot Smuckers Simply Fruit Jam (a couple tbs maybe) mixed with a lot of cinnamon and a dash of vanilla. Just spread it over the crust then top with pecans pieces.
    The other half had carob chips (you can use chocolate if you prefer), a thin coating of Strawberry Smuckers Simply Fruit, blueberries and pecan pieces.

    Move the 2nd pie crust to the top (you can just roll it up with the wax paper, position it over the bottom crust and unroll) then use your rolling pin on it again (careful not to squish out all the good stuff inside!) but it should be fairly thin. Butter a cookie sheet. Cut out the shapes, brush with melted butter and bake for 8 to 10 minutes at 425 degrees. (Or until golden.) I gathered up all the scraps and re-rolled them, cut and bake. They aren't as pretty, but they still taste good. :D

    I can't have sugar, so I used the jam/jelly as sweetener, but if you would like them sweeter you could sprinkle with sugar or make a cinnamon/sugar butter and spread it on the inside with apple bit and pecans or whatever nuts you like. YUM! These are sort of a cookie chip cracker thing. Faintly sweet with the fruit and really hard to eat just one. :laugh: (You can also brush them with beaten egg if you would like them shinier.)

    I'm going to dry some apples and pineapples and give those a try. Dried cranberries, raisins, etc. would be good, too.

    I think I made a mess of explaining it, so if it's just totally confusing, let me know and I'll do a better job. :blush:

    My daughter did a little photo session with all of my grand kids in their Christmas pj's yesterday and I have to be an annoying grandma and share it. :D
    The three adorable elves belong to my son, the other six are my daughters. :wub:
    I LOVE that the photo caught my pouty little 3 year old in the act. Perfect! :lol:
